With the holidays quickly approaching, I’m going through my baked goods recipes and trying to give them easy makeovers to make them stand out. You see, during the holidays, I consider baking to be my thing. Whether we’re going to Thanksgiving dinner, a Christmas work party or a simple family holiday celebration, I want to have a baked good that draws oohs and ahhs when I arrive. There are tons of recipes that I love to rotate through during the holiday celebrations but when I think of holiday gatherings, one recipe stands out above all the rest; Cream Cheese and Black Currant Rugelach Pinwheels.
For those of you who aren’t familiar with Rugelach, it’s a bite-sized cream cheese cookie that’s filled with yummy goodness and it’s pretty much a holiday staple in my home. While I’ve been making these divine little cookies for years, this year I discovered the secret to truly taking my Rugelach Pinwheels to the next holiday level by stuffing them with cream cheese and Black Currant, HERO Fruit Spread. Not only does this combination look amazing (and perfect for holiday gatherings) but it tastes unbelievably good! - 32 Ounces of Room Temperature Cream Cheese
- 1 Pound of Softened Butter
- ½ Cup of White Sugar
- ½ Teaspoon of Salt
- 2 Teaspoons of Vanilla Extract
- 4 Cups of Self-Rising Flour
- 2 Cups of Confectioner's Sugar (Plus ¼ Cup for Dusting)
- 4 Cups of HERO Fruit Spread in Black Currant
- 1 Egg
- Cream together 16 ounces of cream cheese and the butter until it is light and fluffy.
- Add in the sugar, salt and vanilla extract and mix on low until combined.
- Slowly add in the flour while mixing the dough on low just until the flour is mixed in.
- Place your Rugelach dough on a cutting board dusted with flour.
- Divide it into 8 equal parts and wrap each part in plastic wrap.
- Chill for 1 hour.
- Remove each ball of dough from the refrigerator one at a time and roll it out into a rectangle, cutting off the edges..
- Mix together the remaining cream cheese and 2 cups of Confectioner's Sugar.
- Spread one eighth of the cream cheese mixture onto your prepared Rugelach Dough.
- Spread ½ Cup of HERO Fruit Spread on top of the cream cheese mixture.
- Roll you dough up long way, pinching in the fillings.
- Place the roll on a baking sheet, seam down and cool for 30 minutes.
- Remove the prepared Rugelach from the refrigerator and slice each roll into eight equal pieces.
- Place the pieces on a baking sheet.
- Brush the top of each piece with egg wash and then cook on 350 degrees for 15 to 20 minutes.
- Remove from the oven when the dough it golden brown and sprinkle with Confectioner's Sugar.
- Serve and enjoy!
This recipe for Cream Cheese and Black Currant Rugelach Pinwheels is fairly simple and it makes such an impression when served at holiday gatherings. To start, I needed to make my Rugelach dough. To do that I creamed together 16 ounces of room temperature cream cheese and a pound of butter in my mixer.
Once my cream cheese and butter mixture was evenly combined, I added in my sugar, salt and vanilla extract and continued to mix it on low. As soon as the ingredients were combined, I poured in my flour one cup at a time and mixed the dough just long enough to mix it well. Then I immediately transferred it to a cutting board dusted with flour.
Next, I cut my Rugelach dough into eight equal sections and wrapped each section in plastic wrap and placed them in a bowl. I then placed the bowl in the fridge and chilled the dough for an hour.
Now, the reasoning for dividing the dough is because you can make these cookies in batches or with different flavored HERO Fruit Spreads for variety, making it a perfect dessert for holiday gatherings. Once my dough was chilled, I pulled out one of the packets and rolled it out into a rectangle on my floured counter top. As soon as I had it rolled out in a rectangle, I cut off any uneven sides, mixed together the remainder of my cream cheese and two cups of Confectioners Sugar and spread an eighth of the mixture onto my Rugelach dough.
Once my cream cheese mixture was spread on, I was able to get to what really makes these cream cheese and Black Currant Rugelach Pinwheels amazing…..the HERO Fruit Spread. Once I had spread on my HERO Fruit Spread, I rolled the dough up (roll in long ways for best results).
Next, I placed each roll seam down on a baking sheet. Once I had rolled a full baking sheet worth, I chilled them for 30 minutes.
Once my Rugelach Pinwheels was chilled, I pulled each roll off the cookie sheet and sliced it into eight equal pieces. After arranging the circles on my baking sheet, I brushed the top of each one with egg wash and then popped them in my waiting oven at 350 degrees for 15 to 20 minutes.
Now, as I’m sure you can imagine, by the time they got done cooking my house smelled pretty amazing! With their tops a perfect golden color, I removed my Cream Cheese and Black Currant Rugelach Pinwheels (as well as my other varieties) from the oven and added a dusting of Confectioner’s Sugar to the top of each one.
With my Cream Cheese and Black Currant Rugelach Pinwheels perfectly prepared, all that was left to do was share the flavors of the season. I feel so great about taking these bite-sized cookies to holiday parties or giving them as gifts and I never worry that each bite won’t be amazing because I know that with the gourmet taste of HERO Fruit Spread in every bite, I can’t go wrong.
