To say I’m thrilled that the holiday season has arrived is an understatement. This is my favorite time of the year, filled with family and friends and yummy dishes that literally capture the tastes of the season. With a slew of holiday parties on the horizon, I’ve been picking out outfits, trimming the tree and coming up with warm and gooey dishes that are sure to shine all holiday season long. Now, I’m the type of hostess that thinks all my guests need their own special treat that is created just for them. While I know that individual dishes for each individual or couple sounds like a difficult task to accomplish when you’re planning parties filled with family and friends, you seriously can’t go wrong with my Mini Baked Brie with Pomegranate and Honey that’s made with Real California cheese made with Real California Milk and served up in cute little skillets that are the perfect size for enjoying alone or sharing with someone special.
Now, before I share with you why these adorable little dishes of goodness are perfect for all my holiday entertaining needs, it’s important that I point out to you that when it comes to holiday dishes, not all ingredients are created the same. Now that I’ve shared with you why I choose ingredient made with Real California Milk for my Mini Baked Brie with Pomegranate and Honey, I’m going to show you how to wow this holiday season and make it yourself.
- 4 Mini Brie Rounds made with Real California Milk
- 1 Cup of Pomegranate Juice
- ¼ Cup of Sugar
- ½ Cup of Pomegranate Arils
- 2 Tablespoons of Honey
- Sprigs of Rosemary for Garnish
- 4 3.5 Inch Mini Cast Iron Skillets
- Start by adding the pomegranate juice and sugar to a pan and boiling it until it is reduced by half.
- Once the liquid is reduced, stir in the pomegranate arils, transfer to a glass bowl and chill completely.
- While the pomegranate mixture is cooling, unwrap the mini brie rounds and place one in each skillet.
- Place the skillets on a baking sheet and cook on 350 degrees for eight minutes, until the tops start to bubble.
- Remove the skillets from the oven and drizzle ½ tablespoon of honey and 1 tablespoon of the pomegranate mixture over the top.
- Return the skillets to the oven for 3 minutes to warm the toppings.
- Once done, garnish the top of each mini baked brie with a sprig of rosemary and serve with whole wheat crackers.
- Each skillet is the perfect size for two!
While cheese made with Real California Milk is what truly makes these Mini Baked Brie with Pomegranate and Honey shine, the combination of creamy, sweet and sour takes this dish to new levels! To start, I of course needed to make my pomegranate reduction. Making this was as simple as adding one cup of pomegranate juice and 1/4 cup of sugar to my pan and boiling it until it had reduced by half. As soon as my reduction was ready, I poured in my pomegranate arils, removed the mixture from the heat and poured it into a glass bowl so that it could cool completely.
While my pomegranate topping was cooling, I laid out my mini cast iron skillets (are they not the cutest thing ever?) and unwrapped my mini brie rounds made with Real California Milk. The minute I unwrapped my brie, I could tell the difference in this cheese and knew that it would elevate my dish with wholesome, flavorful California cheese flavor.
I immediately placed my brie into each of my little skillets. I chose to use two different varieties of brie made from Real California Milk, one that had a fuller flavor and one that was creamier, giving my holiday guests the choice between the two options.
One I had all of my skillets prepared, I placed them on a baking sheet and transferred them to the oven that was preheated to 350 degrees and cooked the skillets for about eight minutes, just long enough for the top of the cheese to begin to bubble. As soon as I knew my brie was warm all the way through, I removed it from the oven and topped each mini baked brie with one half of a tablespoon of honey.
Then I spooned my pomegranate mixture over the top of the honey.
Now, remember, I had chilled my pomegranate mixture to create a glaze like consistency but I didn’t want to serve it that way so I popped the mini skillets back into the oven for three minutes to warm the toppings. Once the toppings was warm, I garnished each Mini Baked Brie with a sprig of Rosemary.
Then I placed them on a serving board along with whole wheat crackers to complete my holiday dish that’s, well, delicious!
Now, here’s where things get really tasty and the element of this dish that really sets it apart! I served up each of these little skillets of deliciousness with a serving utencil that allows my guests to cut into the perfectly baked brie and release the melty goodness that is inside!
That’s right! When you cut into the Mini Baked Brie with Pomegranate and Honey, the cheese is soft and melty and just right for spreading on crackers. And all it takes is one bite to discover that this is THE perfect dish for holiday celebrations! I mean, it looks festive, it tastes beyond amazing and it’s the perfect size for serving at all your holiday gatherings!
