It’s no secret that I’m on a mission to cut carbs in what my family eats. Not only am I on a lower carb diet but you may or may not know that my oldest son has Type 1 Diabetes. That means that his body does not make insulin and when he eats any food, he has to take insulin to cover the carbs in his meals. With this in mind, I’ve been rethinking some of our favorite foods and coming up with tasty ways that he can enjoy dishes he’s always loved without having to worry about them being filled with carbs. While I’ll admit that I’m still learning and some of my lower crab creations have been a flop, one that has been a total win in our house is my Low Carb Crispy Chicken Nuggets!
While these Low Carb Crispy Chicken Nuggets are still crunchy and flavorful and absolutely delicious, by making a few simple substitutions I’m able to keep them low carb which is perfect for families like mine who want or need to limit carbs at meal time. So let’s make them why don’t we?
- 4 large boneless skinless chicken breasts
- 1 large egg
- 1 cup of almond flour
- ¼ cup of whole wheat flour
- 1 tablespoon or seasoning salt
- Dice the chicken breasts into cubes.
- Whisk the egg and immediately pour it over the chicken, stirring to cover all the pieces of chicken.
- Add the almond flour, whole wheat flour and seasoning salt to a bag.
- Add the chicken and shake it gently to cover the chicken with the coating.
- Preheat the air fryer to 400 degrees.
- Air fry the breaded chicken on 400 degrees for 20 minutes, shaking every five minutes.
- Once the chicken is cooked, remove it from the air fryer and serve it with your favorite dipping sauce.
Once we started our low carb journey in my home, I quickly discovered how amazing almond flour is. While it can taste slightly different in some recipes, I promise you won’t even notice the difference in these Low Carb Crispy Chicken Nuggets. To make them I started by cutting my boneless skinless chicken breasts into cubes. I do look for large chicken breasts so that I can make a full basket of this treat because my guys love it and it saves great as well. Once my chicken is cut into cubes, I whisk my egg and pour it over the top.
After tossing my chicken in the egg, I add my almond flour, wheat flour (this is really an important addition if you want your Low Carb Crispy Chicken Nuggets to turn a golden brown) and seasoning salt to a bag and shake it to mix it all together. Then I immediately add my chicken to the bag, seal it again and shake it well to cover my chicken with the flour mixture.
Once my chicken is coated with the flour mixture, I’m ready to cook it.
Now, to keep these Low Carb Crispy Chicken Nuggets really crispy, I recommend using an air fryer (this is the one I have and I love it!). However, if you don’t have one you can spread them on a baking sheet and cook at 400 degrees for 20 minutes in the oven, turning them half way through the time. Back to the air fryer though. After preheating it to 400 degrees, I add my breaded chicken nuggets and cook them for 20 minutes, shaking the basket every five minutes so that they will cook evenly and stay crispy.
Once my Low Carb Crispy Chicken Nuggets are cooked (I always recommend checking for an internal temperature of 165 degrees Fahrenheit with a food thermometer) I simply remove them from the air fryer, add a dip to the side and serve them up to my family.
For my family, four large chicken breasts makes 8 servings which means that each serving of this Low Carb Crispy Chicken Nuggets is less that 6 carbs! Wow right? And even if you want to eat a little more, you can enjoy a fourth of it for less than 12 carbs (24 carbs from the almond flour, 22 carbs from the whole wheat flour, 1.5 carbs from the seasoning salt, 0 carbs from the chicken, 0 carbs from the egg). That means that whether you’re on a low carb diet or have other reasons for wanting to lower your carb intake, you can enjoy these Low Carb Crispy Chicken Nuggets guilt free!
Note: Remember to account for carbs in dipping sauces if you use them!
