One of my missions in the new year has been to come up with easy lunches that I actually want to eat in order to avoid skipping lunch all together. Most of you already know that I’m really trying to embrace this low carb lifestyle and truthfully, I get bored with the same old thing over and over again. For that reason, I’m crushing pretty hard on chicken salad right now. There are endless ways to dress it up and make it different and the best part is, it’s SO easy to make. While I’m having tons of fun experimenting with flavors to come up with easy lunches, right now I can’t get enough of this Keto Avocado Chicken Salad that uses a creamy avocado mash to level up the flavor.
Why do I love chicken salad so much? Well, it’s a quick and easy meal that I can really put my own spin on. Since I love chicken salad and love avocados, I decided that the best chicken salad would incorporate a creamy avocado mash and that’s exactly what this Keto Avocado Chicken Salad does!
- 1 and ½ ripe avocados
- 3 (9.75 ounce) cans of canned chicken
- ½ of a large, sweet onion (diced)
- 1 teaspoon of mayonnaise
- 1 tablespoon of fresh lemon juice
- Spring salad mix
- Salt and pepper to taste
- Dliced Green onions and crushed walnuts for garnish
- Peel one of the avocado and mash it up in a bowl.
- Add in the mayonnaise, lemon juice, salt and pepper and mix it well.
- Add in the diced onions and drained, canned chicken.
- Stir all the ingredients until the chicken is covered in the avocado mixture.
- Place salad mix on a plate.
- Top with the avocado chicken salad.
- Garnish with green onions and crushed walnuts.
The Keto Avocado Chicken Salad is so simple to make and tastes delicious! As an added bonus, it’s Keto friendly! To start, I added one ripe avocado to my bowl and mashed it up. I then added in my mayonnaise and lemon juice and stirred it all together.
After dicing my onion and draining my cans of chicken, I added both ingredients to the bowl and stirred it all gently, making sure that my chicken was well covered with my avocado mixture.
Once my Keto Avocado Chicken Salad was mixed to perfection, I covered the bottom of my plate with spring mix and then added a large scoop of my chicken salad to the top.
I finished my Keto Avocado Chicken Salad off by sprinkling diced green onions and crushed walnuts over the top.
The creamy avocado mixture combined with the canned chicken creates the perfect guilt free meal and when paired with the crunch of the spring mix, this Keto Avocado Chicken Salad is a lunch worth getting excited over.
