I love Easter dinner. The ham. The green beans. The pies. But my absolute favorite part of Easter dinner is the potatoes. Now I know what you are thinking….out of all the things on the Easter table, the potatoes are perhaps the least exciting. Well, I’m going to prove you wrong on that thought process. You see, for as far back as I can remember I’ve been making our potato dish for our Easter meal and while there are many ways to do potatoes, you’ll never think they are boring again after you’ve made our Buttery Skillet Potatoes with Ham and Peas.
During the spring months, I pretty much keep this recipe on my kitchen counter (it’s laminated of course so that it can last forever) because it’s not only the perfect dish for Easter dinner but it incorporates many of the items I serve for this special holiday, meaning that I can make it once for our meal and then multiple times using the leftovers. While I’ll admit that it’s a fairly simple dish, it is one of the most-asked-for creations that I’ve ever whipped up! And I’m about to share with you my secret ingredient that makes this dish heads above all other potato dishes. As you’ll see shortly, most of the ingredients in my Buttery Skillet Potatoes with Ham and Peas are fairly basic. However, the one ingredient that you cannot substitute ever is salted Plugrá Butter® from Publix. While you may think that all butter is created the same, it’s not. As someone who takes great pride in the dishes I create, I know that Plugrá butter is the key to making my Buttery Skillet Potatoes with Ham and Peas so flavorful. This butter is made with real milk from American Dairy Farms (in case you didn’t know leading premium butters use milk that is imported) has no artificial ingredients and no added growth hormones and perhaps most importantly, it is slow-churned for less moisture which means that it simply performs better in an array of recipes. Salted Plugrá butter from Publix is really the only choice for me when it comes to making my favorite savory dishes. So, let me show you exactly how I use it to make my Buttery Skillet Potatoes with Ham and Peas a dish that can’t be missed.
- 8 tablespoons of Salted Plugrá butter
- 6 large potatoes
- 1 cup of diced ham
- 1 cup of fresh or frozen peas
- ½ cup of diced sweet onion
- ½ cup of shredded cheese
- ½ cup of heavy cream
- 1 cup of crushed buttery crackers
- Salt and pepper to taste
- Using the Plugrá butter, coat a large cast iron skillet.
- Peel the potatoes and slice them into 1-inch thick pieces.
- Going in a circular motion, line the bottom of the pan with potato slices.
- Top the potatoes with pats of butter (2 tablespoons)
- Top with half of the ham cubes, peas, onions and cheese.
- Repeat the process to create a second layer of potatoes and top with pats of butter (2 tablespoons)
- Again, top with ham cubes, peas and onions.
- Mix together the heavy cream, 1 tablespoon of melted butter, salt and pepper.
- Pour it over the top of the potato mixture.
- Sprinkle on remainder of the cheese.
- Crush the crackers and pour in the last of the Plugrá butter. Mix well.
- Spoon the cracker mixture over the top of the potato dish.
- Cook at 350 degrees Fahrenheit for one hour or until potatoes are soft.
- Remove from the oven, allow to cool slightly and serve with Easter dinner.
From start to finish, my Buttery Skillet Potatoes with Ham and Peas have the superior taste of Plugrá butter in every bite. To prepare my dish, I pulled out my large cast iron skillet (you already know that I think anything cooked in cast iron tastes better!) and coated it with my Plugrá butter. From this first step, getting the perfect flavors in this dish is easy because it’s built from the skillet up with Plugrá butter that’s created by chefs who know that delicious dishes start with exceptional ingredients.
Once my cast iron skillet was ready, I set to work peeling my potatoes and slicing them into 1-inch thick slices. I used a mandolin slicer but if you’re in a pinch you can just cut the potatoes with a knife.
Once I had sliced my potatoes perfectly, I arranged them in a spiral pattern in my prepared cast iron skillet and added pats of butter to the top of the potatoes (I used two tablespoons of butter in this step).
I sprinkled pepper over my potatoes and then added half of my cubed ham, peas, diced onion and cheese.
Once my layer of ham, peas, onions and cheese was ready, I repeated the process with my potatoes, adding a second layer of potatoes and topping it with two more tablespoons of butter. Once I had the second layer of potatoes in place, I added the rest of my ham, peas and onions.
With all the important ingredients in my dish, I needed a way to keep my potatoes moist, especially as they baked, so I quickly melted a tablespoon of Plugrá butter and mixed it with a half of a cup of heavy cream and a dash of salt and pepper. Then I simply poured the mixture over the top of my dish.
After adding the remainder of my cheese, I wanted to finish my Buttery Skillet Potatoes with Ham and Peas in a way that would give it a little crunch, so I crushed up one cup of butter crackers and mixed in the remainder of my Plugrá butter once I had melted it. After mixing the cracker crumbs and butter together, I sprinkled them over the top of my dish.
I immediately transferred my Buttery Skillet Potatoes with Ham and Peas to the oven and baked it at 350 degrees Fahrenheit for one hour.
When the oven timer went off, I was able to pull my Buttery Skillet Potatoes with Ham and Peas out of the oven in all of its glory! With perfectly cooked, buttery potatoes, cubes of ham and pops of peas and onions, this Easter side dish was completed with a golden crust and flavors that are beyond compare.
It’s literally the perfect side dish to serve up at Easter celebrations and can even be enjoyed by itself as a flavorful meal.
My family begs for this dish each and every year and I know that it never truly tastes like Easter until I’ve whipped it up using Plugrá butter from Publix.
