I’m a big fan of homemade meals. While it’s easy to whip up breakfasts and dinners in my own kitchen, it can sometimes feel like more of a challenge to keep lunches fresh and exciting for the kids, the hubs and myself. It’s rare that any of us eat lunch at home so I’ve gotten to be a mom ninja when it comes to whipping up amazing lunches to-go that never get old. In truth, it’s a pretty simple task when I have the right ingredients and a little creativity. For all you mamas out there who are burnt out on creating a to-go mid-day meal, let me show you how I keep our lunchboxes fresh with my easy lunch ideas for on-the-go families.
Now, before we get into my easy lunch ideas, I need to be honest. While I’m super creative, implementing that creativity into lunches often ends in what we’ll refer to as Pinterest fails. I don’t make sticky rice pandas or space ship shaped sandwiches to turn my kid’s lunchboxes into a work of art. What I am GREAT at however is coming up with tasty sandwich creations paired with simple sides that always disappear. Here’s how I do it!
Stock up on Essential Lunch Ingredients from Publix
In case I haven’t already made it abundantly clear, sandwiches are my family’s jam when it comes to the perfect lunch. Maybe I’ve been blessed with super easy eaters but for my littlest, my teen, my hubby and myself, we’re completely happy with a really delicious sandwich, some fruit, a crunchy side and a drink. While it sounds like I’ve hit the jackpot when it comes my little crew (I’ll admit I totally have), I like to keep things surprising and delicious and my secret for doing this is by stocking up on easy ingredients from Publix. While I may not know each morning exactly what combination I’m going to place in each of our lunchboxes, I do know that if I’m stocked up on lunchbox essentials like Hellmann’s® Mayonnaise, Hillshire Farm® Lunch Meats, Cheez-It® Snap’d™, Del Monte® Fruit Cups®, Sargento® Sliced Cheese and Publix Bakery bread, I’ve got everything I need to not only build a better sandwich, but create easy lunch ideas for every member of my family.

Mix Things Up to Keep Lunches Exciting
Once you’ve stocked up on all the ingredients for your easy lunch ideas by shopping the Build a Better Sandwich savings event at Publix, the question becomes, what do you do with them? Now, for those of you who think a sandwich is a sandwich is a sandwich, let’s have a little lunch time discussion, why don’t we? Sandwiches can be simple. They can be complex. They can be filled with cheese and meat for picky eaters or loaded up with veggies for those who are more adventurous. A few of my family’s favorite sandwich combinations are:
- Turkey, bacon and cheddar with arugula
- Ham, Swiss and avocado
- Chicken, salami and provolone
- Grilled Zucchini with pepper jack
Truthfully the list goes on and on because really, you can’t go wrong with two freshly baked pieces of Publix bakery bread, a smear of mayonnaise, Sargento Cheese and Hillshire Farms deli meat. Once you’ve got those key components, all you have to do is add in the veggies you love or enjoy your sandwich as is. Right now, I’ll be the first to admit that this mama is crushing HARD on the turkey, bacon and cheddar with arugula sandwich made with ingredients from Publix. I love nothing more than to pull that fresh bakery bread out of the bag and spread on my Hellmann’s mayonnaise.
Then I simply layer on arugula lettuce, Hillshire Farms turkey, Sargento cheddar cheese and crunchy bacon.
Once I put my top piece of bread in place and give it a little squeeze, I’ve got what is literally the most delicious sandwich on the planet and the one which I could honestly eat every single day.
While this is MY sandwich of choice every day of the week, I’m more than willing to admit that variety is the spice of life for my guys, so I regularly mix things up and make Mondays meatless, Tuesdays all about turkey, Wednesdays full of chicken and so on and so forth! Since I keep my fridge stocked with easy lunch items, it’s really as easy as opening the refrigerator door and creating the combination that excites my family that day. In addition to creating different sandwich combinations, my advice is to mix things up with the perfect sides to complement all those sandwich creations. I’m a big fan of divided lunch containers and in my mind, the perfect easy lunch ideas include fruit and something crunchy. Thankfully the Build a Better Sandwich event at Publix offers savings on Del Monte Fruit cups that are the perfect size to fit in my containers and Cheez-It Snap’d crackers. With a variety of options and flavors in both these sides available in the aisles at Publix, I can get just as creative with my lunchtime combinations as I do with my sandwiches. My turkey, bacon and cheddar with arugula pairs perfectly with Del Monte Mandarin Oranges and Cheez-It Snap’d White Cheddar and Bacon crackers.
My ham, Swiss and avocado wouldn’t be nearly as amazing without with a Del Monte peach cup and classic Cheez-It Snap’d crackers.
And my chicken, salami and provolone sandwich? Well, it’s the perfect match for Del Monte mixed fruit and Cheez-It Snap’d Cheddar Sour Cream and Onion Snap’d crackers.
You see, with fairly simple ingredients and a little bit of creativity, I’m able to come up with endless easy lunch ideas that are always a delicious new take on our mid-day meal!
