When it comes to snacks and meals in my house, I’ve always subscribed to the thought process that simple is better. While I love to give all of my dishes a homemade touch, I regularly start them with frozen and refrigerated ingredients that I can put my own spin on. I find inspiration in taking pre-made items and putting them together in meals that are delicious in the most surprising ways, and recently I was able to do just that when I whipped up a dish that has become one of the most asked for recipes in my household. These Loaded Veggie Tots boast veggies, chicken and toppings put together in a seriously tasty way and the best part is, they are so easy to make. Read on to find out how to whip up Loaded Veggie Tots for your family today.
Before we get to my recipe for Loaded Veggie Tots that are perfect for game days, weekdays or really any day, let’s talk about how (and why) I stock my fridge and freezer with frozen items and dairy products from Publix. All of you already know that I live in a house full of guys. I have a teen that often appears to have a hollow leg, a hubby who might have married me for my cooking skills and a little guy who is a picky eater. There are few days in my life that I don’t find myself needing to whip up a quick snack or meal to fill their bellies. That’s why I always stock up on frozen items and dairy products from Publix. From Green Giant Veggie Tots and Tyson Any’tizers, to Sargento Cheese Sticks, they have everything I need to be able to make a delicious meal or snack on the fly. While there are literally tons of items included in this sale, I wanted to show you how two of my staples, Green Giant Veggie Tots and Tyson Any’tizers, came together to help me create my crazy delicious Loaded Veggie Tots.
- 1 bag of Green Giant Veggie Tots Broccoli
- 1 bag of Green Giant Veggie Tots Sweet Potato and Cauliflower
- 1 bag of Tyson Any'tizers Popcorn Chicken
- ½ cup of shredded cheese
- ¼ cup of sour cream
- 6 slices of bacon (cooked and crumbled)
- Diced green onions for garnish
- Cook the Green Giant Veggie Tots and Tyson Any'tizers according to the directions on the packages.
- Once cooked, add a mixture of the Veggie Tots to small dishes or a large serving tray.
- Dice up the Tyson Any'tizers Popcorn Chicken pieces and sprinkle them over the top.
- Sprinkle shredded cheese on top of the Veggie Tots and Popcorn Chicken.
- Place back in the oven on broil until the cheese is melted and bubbly.
- Top with sour cream, bacon and green onions.
- Serve and enjoy!
Whipping up these Loaded Veggie Tots is so simple using ingredients from the Cool Foods savings event at Publix and the best part is, if you’re like me and always keep your freezer stocked with Green Giant Veggie Tots and Tyson Any’tizers, you can make this dish any time you want. To start I pulled out my Green Giant Veggie Tots (I like to use a mixture of the Broccoli flavor and the Sweet Potato with Cauliflower flavor) and added them to my baking sheet.
Next, I pulled out my Tyson Any’tizers Popcorn Chicken and did the same with them.
After cooking both my Green Giant Veggie Tots and Tyson Any’tizers according to the directions on the package, I was ready to assemble my Loaded Veggie Tots. Now, I personally make this dish two different ways. I create individual sized servings in mini cast-iron skillets (because everything is better when served in a cast-iron skillet!) and I also make a bigger dish on a platter or serving board. Why do I do this you ask? Well, with kids and friends constantly in my home, I like to serve up a grab-and-go option for the teens to take to their area and a larger platter for the rest of us to enjoy. To do this, I add a mixture of my two veggie tot varieties to both of my skillets and my serving platter. Then I simply diced up my Tyson Any’tizers Popcorn Chicken and add it to the top of my Veggie Tots.
Once I have the Green Giant Veggie Tots and Tyson Any’tizers in place, I sprinkle cheese over the top and then pop both dishes into the oven on broil just long enough for the cheese to melt. Once the cheese is melted perfectly, I remove my Loaded Veggie Tots from the oven and layer on my sour cream, crumbled bacon and green onions.
Once I’ve added all my ingredients to my Loaded Veggie Tots, I’m able to serve them up and let me tell you, this is one dish that never lasts long in my home.
Personally, I love knowing that I’m serving up a snack or meal that included veggies, chicken and tons of flavor. And if my littlest who thinks he hates veggies believes that I’m simply offering him a tater tot snack that he can’t get enough of? Well, he’s none the wiser and I feel pretty great about my ability to sneak in some veggies anywhere I can!
Once my Loaded Veggie Tots are served, it doesn’t take long for this easy dish made with ingredients that are on sale now at Publix to disappear. The teens swoop in and grab their mini cast-iron skillets filled with tasty goodness that they can’t get enough of.
The rest of us nosh away on the larger platter that’s perfect for sharing.
