With summer quickly approaching, the boys and I have turned out thoughts to summer movie nights. One of our favorite activities during the warm summer months is to watch a fun movie outdoors on a sheet or screen with a projector while enjoying a perfect snack. For as long as I can remember, we’re paired popcorn with our movies but I decided it was time to give this classic snack an outdoor summer movie twist. Read on to learn how to make S’mores Popcorn for summer movie nights.
In our home, summer is about two things….movies and s’mores. While in the past we’ve enjoyed traditional s’mores before or after our summer movie nights, this year I decided that we could have the best of both worlds with a fun S’mores Popcorn and I have to say, it’s been a huge hit! You can make it in large or small batches that are perfect for intimate family movie nights and great for inviting over the neighbors and sharing. So get ready to throw up your screen, turn on your favorite movie outdoors this summer and snack on our delicious S’mores Popcorn.
- 2 bags of microwave popcorn (popped)
- 1 cup of milk chocolate chips
- 1 teaspoon of coconut oil
- 6 graham crackers
- 2 cups of marshmallows
- Pop the popcorn and spread it out on a lined baking sheet.
- Add the chocolate chips and coconut oil to a measuring cup and microwave for 30 seconds.
- Stir and return to the microwave for 15 seconds. Repeat until the chocolate is creamy when stirred.
- Drizzle the chocolate over the popcorn.
- Immediately crush the graham crackers and sprinkle them on to the chocolate so they will stick.
- Sprinkle the marshmallows over the top.
- Broil in the oven on low for 2-3 minutes until the marshmallows begin to brown.
- Serve in small tins for summer movie nights.
To make this easy S’mores Popcorn, I started by popping two bags of good old microwavable popcorn. We like to use the butter variety but you can also you kettle corn for a sweeter treat. Once our popcorn was popped, we spread it an aluminum foil lined baking sheet.
Next, I added one cup of milk chocolate chips and a teaspoon of coconut oil to a measuring cup and microwaved it for thirty seconds. After stirring it, I returned it to the microwave in fifteen second intervals until it was smooth and creamy when stirred. Once my chocolate was ready, I simply used a spoon to drizzle it over my popcorn.
Next, I immediately crushed up my graham crackers and had my little guy sprinkle them over the chocolate while it was still warm and gooey so that the graham crackers stuck into the chocolate, securing them in place and guaranteeing chocolate and graham crackers in every bite of this s’mores popcorn.
Finally, I sprinkled my marshmallows over the top of the popcorn and stuck the whole tray back in the oven on low broil for 2-3 minutes, watching it carefully and allowing it to stay in the oven just long enough for my marshmallows to turn brown and gooey.
As soon as my marshmallows were browned, I took my s’mores popcorn out of the oven and transferred it into small serving tins and delivered it to my waiting guys.
This fun treat is seriously perfect for summer movie nights and is a delicious snack that everyone in the family will enjoy munching on.
