With summer quickly approaching, I’m pulling out my family’s favorite summer recipes and whipping up some dippable summer snacks that my kids adore. For us, summer food is food that’s fun. I love to take classic dishes that I know my guys will adore and make them bigger and better. One of my favorite recipes that does just this is my oven baked cheese stuffed onion rings and this year, I’ve come up with a way to make this amazing dish even better though pairing it with Hunt’s thickest, richest, best ever Ketchup. Read on to learn how to make this summer staple of cheese stuffed onion rings paired with Hunt’s Best Ever Ketchup.
My guys adore onion rings. There’s just something about that crunchy shell with tender onion inside that screams summer to them. While I make traditional onion rings on the regular, sometimes I like to go big and when inspiration hits me, I whip up my oven baked cheese stuffed onion rings. Let me tell you that these are big, delicious snacks that are crunchy and cheesy and amazing. Even better, now that I’ve found Hunt’s thickest, richest, best Ketchup ever, I’ve been able to take my cheese stuffed onion rings to the next level by dipping them in ketchup that’s truly worthy of their big, delicious taste. Now that you’ve got the perfect ketchup to pair with these cheese stuffed onion rings, let’s make them, m’kay?
- 1 cup of Hunt's Best Ever Ketchup
- 3 large sweet onions
- 8 cheddar cheese sticks
- ½ cup of buttermilk
- 2 large eggs
- 2 cups of bread crumbs
- Salt and pepper
- Peel each of the onions and cut them into inch thick slices.
- Separate the rings of the onions.
- Cut the cheese sticks long ways into thirds and line the largest onion rings with the cheese.
- Add a smaller onion ring to the middle, using it to create a cheese ring in between the two.
- Dip the cheese stuffed onion ring into buttermilk and place it on a lined baking sheet.
- Freeze for two hours.
- Once frozen, dip the cheese stuffed onion rings in whipped raw egg and then immediately in bread crumbs.
- Place the breaded cheese stuffed onion rings on a baking pan.
- Bake at 425 degrees for 25 minutes or until golden brown.
- Remove the onion rings from the oven, allow them to cool and then serve immediately with Hunt's Best Ever Ketchup for dipping.
- Dip, dunk and enjoy!
These cheese stuffed onion rings are actually very simple to make and they are seriously the perfect summer snack or side when dipped in Hunt’s Best Ever Ketchup! To make them, I simply grabbed my sweet onions, peeled them and cut them into thick slices (about an inch thick will do).
Once I had cut my onions into slices, I pulled the rings apart, starting with the largest one. Then I laid them out in order, pairing up every other one so that there was room to add cheese to the middle of my two onion slices. Once I had pulled my onion rings apart, I cut my cheese sticks into thirds (the long way). You can totally use block cheese for this step as well. Once I had my onion rings and my cheese sticks prepared, I simply used the skinny pieces of cheese to line the inside of each of my larger pieces of onion rings.
Once I had my cheese in place, I simply added my smaller onion rings to “sandwich” the cheese in the middle.
Next, I dipped my cheese stuffed onion rings into buttermilk (because I’ve always dipped my onion rings in butter milk since my mom did that as well) and placed them on a lined baking sheet. Then I frozen them for two hours.
This freezing step is SO important for these onion rings because it causes the cheese to harden and everything to freeze together so that it cooks up just perfectly in the oven. When my onion rings were frozen just right, I pulled them back out of the freezer, cracked my two eggs into a bowl and added my bread crumbs, salt and pepper to a second bowl. Then I simply dipped my frozen cheese stuffed onion rings first into the egg mixture and then into the bread crumb mixture.
Once I had dipped my onion rings once, I repeated the process because, well, I like crunchy onion rings paired with thick, rich Hunt’s Best Ever Ketchup. When I had plenty of breading on the outside of my onion rings, I placed them back on my baking sheet and popped them into the oven on 425 degrees for 25 minutes.
While they cooked, the onions got soft, the cheese got gooey and that bread crumb crust got crunchy so that it could hold all the goodness inside.
