Summer is so close that I can feel it. As the days get longer and the weather gets warmer, I’m counting down till Memorial Day weekend when we officially kick off the start of summer vacation. While it’s no secret that as soon as it’s warm outside we fire up the grill for pretty much every meal, this is also the time of year when I start dusting off my cold pasta salad recipes for our big Memorial Day gathering, as well as all of our summer cookouts that will be occurring in the coming months. As any good southern entertainer knows, cold pasta salad is a staple at summer gatherings and for this mama, creating the ultimate summer pasta salad dish means getting the best pasta and pairing it with bold, tangy flavors to create my Mediterranean Homestyle Pasta Salad that pairs perfectly with burgers, hotdogs, chicken and even steaks!

- 1 box of Ronzoni Homestyle Pasta
- 1 cup of kalamata olives
- ½ cup of diced purple onions
- ½ cup of chopped sundried tomatoes
- ½ cup of feta cheese
- ¼ cup of balsamic vinegar
- ¼ cup of light olive oil
- 1 tablespoon of minced garlic
- 1 tablespoon of freshly chopped oregano
- 1 teaspoon of dried basil
- Cook the Ronzoni Homestyle Pasta according to the directions on the box.
- Drain the pasta and refrigerate it for one hour.
- When cool, add the pasta to a bowl along with the kalamata olives, diced purple onions, sundried tomatoes and feta cheese.
- In a measuring cup, mix together the balsamic vinegar, olive oil, minced garlic, fresh oregano and dried basil and combine well.
- Pour the mixture over the top of the pasta and stir until well combined.
- Garnish with fresh oregano and serve immediately or refrigerate.
To make this delicious Mediterranean Homestyle Pasta Salad that’s literally the perfect summer cookout food, I had to first boil my Ronzoni Homestyle Pasta. Trust me when I say this is the pasta to use for your summer pasta salad due to the fact that it’s made from two simple ingredients (high-quality semolina wheat flour and fresh eggs) and tastes amazing! As soon as my pasta was cool (trust me when I tell you to cool the pasta prior to mixing in the other ingredients), I added it back to a bowl along with my kalamata olives, purple onions, sundried tomatoes and feta cheese.
Next, I quickly whipped together my balsamic vinegar, olive oil, minced garlic, fresh oregano and dried basil. As soon as my mixture was well combined, I poured it over my pasta and mixed everything together to ensure that every single bite of this Mediterranean Homestyle Pasta Salad is bursting with flavors that are perfect for summer gatherings.
Once my pasta salad was complete, I garnished it with a little more fresh oregano and served it immediately to my waiting family (if you’re not going to serve it immediately, keep your pasta salad in the refrigerator to keep it cool and the flavors crisp).
I have to say, they knew the minute they saw me with pasta salad in my hands that the start of summer is imminent and while this was only my trial run for our big Memorial Day gathering, we’re all beyond excited to enjoy this favorite summer dish in the coming weeks and months as we savor warm summer days and delicious cookouts with friends.
