I’ve long been a believer that adding pickles to any recipe makes it better. When I eat a burger, I want a full layer of pickles on top. When I whip up a salad, there better be crunchy pickles present. Living a low-carb lifestyle, pickles are not only a key ingredient in many of my recipes but they are also an essential snacking option that adds a little tang to any time of my day. With my love for pickles being so pronounced, any time I’m grocery shopping I always make a stop at the pickle aisle to stock up and recently, I discovered that my beloved pickles have taken on a ready-to-travel form with new Mt. Since you all already know that I’m traveling pretty much all summer, I of course stocked up on this pickle essential and whipped up what I think is the perfect summer lunch, my beloved Dill Veggie Wraps. Now, if you’re like me and truly love pickles, you probably take them everywhere. From having them available for snacking in my purse to throwing them in my pool bag or hiking backpack, generally if I’m going anywhere pickles are coming along. It was no different for me as I packed for our little adventure on the coast this summer and so, as I packed up the must-have items that I wanted to take with me, I of course found myself standing in the pickle aisle at my local Publix. As I focused in on the Mt. Olive Pickles which I always reach for since they are the #1 pickle, peppers and relish brand in the country, I saw something new. Nestled next to the jars that I’ve bought for years were pouches that I had never seen before. With a resealable top and a much more portable container, I was intrigued and wondered what Mt. After grabbing both of the varieties of Mt. Olive Pickles in pouches that were available at my local Publix, I finished my shopping trip and in the following days, I packed up all my essentials (including my Mt. Olive Pouches of course) and headed for the coast. Once I arrived at the beach, I was reminded again what a great idea these Mt. Olive Pouches were because not only did they keep my beloved pickles fresh during travel but they were SO much easier to take on-the-go that their glass cousins.
Now that I’ve been at the beach for a week, I’ve discovered that whether I’m traveling or not, Mt. Olive Pouches are seriously the perfect addition to my daily routine. While I’ll tell you that they are perfect to pack in my beach and pool bag to much on while I’m on the beach or reading my favorite book while the kids swim, my favorite use for these crunchy little bites of deliciousness has to be using the in my Dill Veggie Wraps that are perfect for easy summer lunches.
- 1 pack of Mt. Olive Kosher Petite Dills in Pouches
- 4 Whole Wheat Tortillas
- 1 cup of lettuce
- 1 large zucchini
- 1 large squash
- 1 large carrot
- 1 teaspoon of olive oil
- ½ teaspoon of sea salt
- ½ cup of mayonnaise
- Fresh dill
- Slice the zucchini, squash and carrots into long, thin slices.
- Season with olive oil and sea salt and bake on 400 degrees for 15 minutes, until veggies are cooked but still crunchy.
- Cool the veggies completely.
- Mix together the mayonnaise, one tablespoon of freshly minced dill and one teaspoon of the pickle juice from the Kosher Petite Dills in pouches.
- Spread the mayonnaise mixture on each of the whole wheat tortillas.
- Add the veggies and lettuce in sections.
- Place a row of Mt. Olive Kosher Petites Dills in the middle.
- Fold the ends of the wrap in and roll it up tightly.
- Cut each wrap in half.
- Serve immediately or refrigerate for later.

These Dill Veggie Wraps are seriously a summer staple and by using Mt. Olive Kosher Petite Dills in pouches in them, they are not only delicious but also bursting with my beloved pickle flavor! To start them, I sliced my zucchini, squash and carrots into long, thin slices and drizzled olive oil and sea salt over the top of them.
Once my veggies were seasoned, I baked them at 400 degrees for fifteen minutes, just long enough for them to cook but still retain some of their crunch. As soon as my veggies were cooked, I immediately placed them back in the refrigerator to cool completely since I personally think these Veggie Dill Wraps are best when served cold. With my veggies chilling, I mixed together my mayonnaise, fresh dill and a little of the pickle juice from my pouches of Mt. Olive Kosher Petite Dills (trust me on this one…it really makes the flavor pop).
Once my sauce was made and my veggies were chilled, all that was left to do was put together this tasty lunch or dinner dish that’s perfect for the warm summer months. To do this I laid out my whole wheat tortillas and spread on my mayonnaise sauce, leaving about an inch around the sides without the sauce so that they would be easy to roll up.
Once I had the mayonnaise sauce perfectly (and generously) spread, I added rows of my cooked veggies and lettuce.
With my veggies and lettuce in place, I was ready for the ingredient that makes these Dill Veggie Wraps truly delicious….the Mt. Olive Kosher Petite Dills. I quickly added a line of these cute and crunchy little pickles down the middle of my veggies.
Then all that was left to do was fold over the ends and roll up my Dill Veggie Wraps. Since I like to make these in advance so that they are perfect for picnics on the porch or beach, I quickly wrapped each one in parchment paper and stored them in the fridge.
Then, when I’m ready to head out for the afternoon, all I have to do is cut my Dill Veggie Wraps in half and serve up this cool, crunchy, tangy meal that is sure to satisfy everyone in my family and especially me!
