I have always loved spicy foods. Ever since I discovered that I could up the flavor and the heat of my favorite dishes with a variety of ingredients, I’ve been a subscriber to the belief that no food is complete until I’ve added a little extra heat. While I’m a fan of spicy dishes all year long, one of my favorite summer snacks has had me struggling for quite a few years. You see, since having my youngest son almost nine years ago, my body changed and those spicy foods that once brought me nothing but joy now bring me heartburn. Since I’m (obviously) not going to give up my favorite dish, which just happens to be Spicy Jalapeño Nachos that are to die for (don’t worry, I’ll give you the recipe for those later!), I’ve long been on the search for a better way to manage my frequent heartburn. Driven by the desire to enjoy this favorite dish as well as a variety of spicy dishes that set my taste buds dancing, I wanted to take a minute to share with you all the recipe for these Spicy Jalapeño Nachos (they are truly summer time perfection). But also, I wanted to share my best not-so-secret weapon that helps manage frequent heartburn so that I can enjoy spicy snacks, dishes and drinks to my little heart’s desire without worrying that I’ll be up all night suffering because of it!
Before we get to my recipe for Spicy Jalapeño Nachos, let’s talk a little bit about heartburn for a minute why don’t we? Growing up, I never struggled with heartburn. In fact, up until the birth of my second son in my 30’s, I could pretty much eat what I wanted and not worry about heartburn. Then, with my second pregnancy everything changed. I had massive heartburn the entire time I was growing that little person in my belly and while everyone said it was simply an indicator of a thick head of hair when he was born (which it was), it never went away. I’ll admit that I tried modifying my diet but man, did I miss my spicy foods. After a year or so I decided that I would just put up with the discomfort so that I could have my favorite dishes but any of you who have suffered from frequent heartburn know that you do that a few times and then swear you’ll never do it again. So, knowing that I couldn’t give up my spicy foods but that I also couldn’t deal with the frequent heartburn they caused, I went on a search for a better solution and found it with Nexium® 24HR (Use as directed. May take 1 to 4 days for full effect).
As the #1 choice of Doctors for their own frequent heartburn, Nexium® 24HR is a small pill that works for me to block acid at the source by simply taking one each day. This solution that is perfect for my frequent heartburn doesn’t just mask symptoms, like other heartburn medications, but actually turns my body’s acid pumps from on to off, giving me relief from heartburn all day and night. In fact, for frequent heartburn sufferers like me who have heartburn more than two days a week, PPIs like Nexium® 24HR are the only over-the-counter treatments specifically approved and designed for the treatment of frequent heartburn. That means that when I eat the spicy meal or enjoy that spicy drink, I can feel confident that my Nexium® 24HR is ready to stop the acid before it starts so that I won’t suffer from heartburn during the day or through the night! It means that I can munch away knowing that the only thing my favorite spicy foods will leave behind is happiness! In fact, Nexium® 24HR has a satisfaction guarantee or your money back so I never even think twice now about eating the nachos, or adding extra spice to any dish that I order.
Nexium® 24HR has me feeling so confident that I can beat heartburn that I’ve been whipping up my absolute favorite Spicy Jalapeño Nachos at least once a week lately (OK, who am I kidding they make multiple appearances weekly!). Even better, now that I’ve told you how to get relief from frequent heartburn all day and night with help from Nexium® 24HR, I’m going to show you exactly how to make this spicy dish that is sure to make your taste buds dance!

These Spicy Jalapeño Nachos are the perfect summer snack or meal that are so easy to make and such a wonderful combination of flavors that everyone will be reaching for them. To start, I browned and drained my hamburger meat and mixed in my taco seasoning and water. After simmering the mixture over low heat until the liquid disappeared, I laid out my chips on a lined baking sheet and topped them with the seasoned hamburger mixture and pepper jack cheese.
I then put them into the oven on 350 degrees for 8-10 minutes to melt the cheese and get the entire dish warm and gooey. Once my cheese was melted, I pulled my Spicy Jalapeño Nachos out of the oven and topped them with pico de gallo, diced green onions, avocado and sour cream. I then finished them with big, spicy slices of Jalapeños that are what truly make this dish unforgettable!
I quickly added a few slices of lime to the side of my pan (it cuts through some of the heat for those who don’t have my fortitude for huge chunks of Jalapeños) and served up my Spicy Jalapeño Nachos for a summer meal that’s beyond satisfying.
Trust me when I say that these Spicy Jalapeño Nachos are literally packed with flavor in every single bite. The crunch of the chips pairs perfectly with the smoky flavor of the meat and by using pepper jack cheese, spicy pico de gallo, cool sour cream and my favorite Jalapeños, there is not a single bite of this dish that doesn’t heat up my entire mouth in the best possible way!
Thankfully, this summer I can enjoy my Spicy Jalapeño Nachos any time I want because I’ve got the confidence in Nexium® 24HR. (Use as directed. May take 1 to 4 days for full effect)!
