Ya’ll, summer has gotten hot which has meant that I’ve needed to rethink quick lunches and come up with cool options that are satisfying while being low-carb (cause you know I’m all about that low-carb lifestyle. Day after day, I’ve found myself either whipping up some chicken salad or simply munching on an avocado because, well, it’s just too hot to do much else. But yesterday, inspiration struck. As I looked at my perfectly ripe avocados and tried to decide (once again) between that and chicken salad, I thought why not combine the two? I have no idea why it took me so long to come up with this idea but let me tell you, these Chicken Bacon Ranch Stuffed Avocados are pretty much the perfect summer lunch. Even better, they take about ten minutes to make and I’m going to show you exactly how to do it cause, you know you want to join me in Chicken Bacon Ranch Stuffed Avocados for lunch tomorrow, right?
It’s important for me to state that I think anything paired with avocado is delicious. But stuffed avocados? Well, that just takes things to a whole new level. While my Chicken Bacon Ranch chicken salad is honestly pretty bangin’ by itself, when you stuff an avocado full of it…well, you get summer lunch perfection. Here’s how I made it.
- 3 ripe avocados
- 16 ounces of canned chicken (can substitute fresh cooked and cubed chicken if desired)
- 1 teaspoon of mayonnaise
- 2 tablespoons of light sour cream
- 1 teaspoon of ranch seasoning
- 4 slices of cooked crumbled bacon
- 2 tablespoons of ranch dressing
- Chopped lettuce for garnish
- Cut each of the avocados in half and remove the seed.
- Hollow out a small amount of the avocado using a spoon, setting the extra avocado aside.
- Add the chicken, extra avocado, mayonnaise, sour cream, ranch seasoning and crumbled bacon to a bowl and combine well.
- Spoon the chicken salad mixture back into the prepared avocados.
- Drizzle ranch dressing and chopped lettuce over the top.
These Chicken Bacon Ranch Stuffed Avocados are so easy to make. To start, I cut my avocados in half and removed the seeds. Then I used a spoon to slightly scoop out the inside. I didn’t want to take too much out but wanted there to be plenty of room for the chicken salad to be stuffed back into the avocados. As soon as my avocados were prepared, I added my chicken, the avocado I had pulled out of my prepared avocados, mayonnaise, sour cream, ranch seasoning and crumbled bacon to a mixing bowl.
Then I simply stirred it all together, ensuring that I had combined all of the ingredients well to create a creamy, delicious chicken salad.
Once my chicken salad was ready, I simply spooned it back into my prepared avocados, filling each one completely until it was, well, stuffed.
To add an extra pop of flavor and a little bit of crunch, I drizzled my ranch dressing over the top of my Chicken Bacon Ranch Stuffed Avocados and then sprinkled some chopped lettuce on the top. Just like that I had a perfect, simply lunch that was cool, flavorful and completely satisfying for hot summer days.
No sooner did I set my plate of Chicken Bacon Ranch Stuffed Avocados down than my family started grabbing them and I can’t say that I blame them.
