In my home this is the year of grilling. While we may be on the coast for the summer months, mama has taken a crash course and learned how to man the grill and I’ll be honest, I’m whipping up some pretty tasty dishes. While my hubby will always be the grill master of the meats (don’t worry, babe, your job is not in jeopardy!), I’ve discovered that when it comes to grilled foods, creativity is king. Give me a bottle of Stubb’s® Legendary Bar-B-Q Sauce, some fresh ingredients and the grill and I can guarantee you that I’ll be able to come up with something amazing. I fully understand that when I say barbecue most of you think meats but I’m about to rock your world with a fun appetizer or meal idea that will leave your taste buds singing while changing what comes to your mind when I say barbecue. Let me introduce you to my smoky, tasty, finger-licking good Grilled Stuffed Sweet Peppers.
Whether you’re a vegetarian (I’m not), a veggie-lover (I am), or simply someone who likes to think outside of the box when it comes to grilling up amazing dishes for the whole family to enjoy, I can guarantee you’re going to go crazy over these Grilled Stuffed Sweet Peppers. So, I guess you’re wondering how this dish came to be and I’m happy to tell you (and give you the recipe too!). I’ve long been a fan of barbecue sauce on, well, everything. Chicken, ribs, burgers, steaks….I’ve never met a meat that didn’t go perfectly with some Stubb’s Bar-B-Q Sauce. That’s why I always have Stubb’s Legendary Bar-B-Q sauces that are gluten free, have no MSG, no hfcs, no tran fats and no sulfites on hand. If you were to take a look in my pantry, you’d find a variety of Stubb’s products that are made with all natural ingredients and have big, bold flavors. And while I’m always gonna reach for Stubb’s when it’s meat grilling time, my veggie-lovin’ self was feeling like some of my meatless dishes were getting the short end of the stick. With that in mind, I decided to create a grilled summer recipe that has that smokey, barbecue taste that everyone adores in a form that’s fun for appetizers, lunches, dinners or simply as a snack. Here’s how I made it!
- 16 Mini Sweet Peppers
- 8 ounces of cream cheese (softened
- ½ cup of Stubb's Smokey Mesquite Bar-B-Q Sauce
- 2 tablespoons of French's Yellow Mustard
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 cup of Mozzarella Cheese
- ¼ cup of Stubb's Smokey Mesquite Bar-B-Q Sauce for garnish
- ⅓ cup of diced green onions.
- Cut the mini sweet peppers in half and remove any seeds.
- Add the cream cheese, Stubb's Bar-B-Q Sauce, French's Mustard, salt and pepper to a mixing bowl and cream together.
- Pour in the Mozzarella Cheese and stir gently.
- Fill each of the mini sweet pepper halves with the bar-b-q mixture.
- Preheat the grill to 300 degrees and place the pepper halves on the grill.
- Grill for 5-7 minutes, until the peppers are cooked and slightly charred on the bottom.
- Remove the peppers from the grill and transfer them to a serving dish.
- Drizzle more Stubb's Bar-B-Q sauce over the top.
- Garnish with diced green onions.
- Serve immediately.
While I’ve already admitted that you may not think of adding Stubb’s Legendary Bar-B-Q Sauce to veggies, it’s a total must try and I’ll be honest with you….it’s addition to my Grilled Stuffed Sweet Peppers made them beyond amazing! To start, I washed my mini sweet peppers, cut them in halves and removed all visible seeds. Then I simply laid them on my baking pan while I created my creamy barbecue filling.
Now, I don’t know about you guys but for me, filling these mini sweet peppers with a smoky, creamy, slightly tangy filling was the recipe for perfection. I quickly added my cream cheese to a bowl and them measured out my Stubb’s Smokey Mesquite Bar-B-Q sauce.
While all of the Stubb’s varieties are totally delicious, there’s just something about the smokey flavor of this one that makes it a perfect fit for this Grilled Stuffed Sweet Peppers recipe. Once I had measured out my Stubb’s Bar-B-Q sauce, I poured it in with my cream cheese.
While I could have stopped with these two ingredients and had a totally delicious filling for my Grilled Stuffed Sweet Peppers, I wanted to add just a little bit of ta tangy element so I quickly reached for my French’s Classic Yellow Mustard. This ingredient is a must in our home for sandwiches, burgers and more and it’s addition to the filling for this delicious grilled recipes really elevates the flavor profile.
After adding a little salt and pepper, I used a mixer to combine my filling until it was smooth and creamy. Then I added in my Mozzarella cheese, stirred it just long enough to make sure the cheese was even throughout the filling and spooned it into my waiting sweet pepper halves.
With all of my peppers prepared, I headed out to the grill to cook them to perfection. While I’ve already admitted that I leave the meat grilling to the hubs, I’ve been delighted to discover that grilling is not nearly as hard as I thought it would be. I simply switched on my grill, let it heat to 300 degrees and then laid my peppers on the grates.
After closing the lid of my grill, I allowed my Grilled Stuffed Sweet Peppers to grill for 5-7 minutes, just long enough to cook the peppers and put a little bit of that char on the bottom of them that pairs so well with the smokey flavor of the Stubb’s Legendary Bar-B-Q sauce.
Once my Grilled Stuffed Sweet Peppers were grilled to perfection, I removed them from the grill and transferred them to a serving dish. Then I immediately drizzled more of the Stubb’s Legendary Smokey Mesquite Bar-B-Q sauce over the top because, well, it just makes things even more delicious! Once I had drizzled the peppers with more of my Bar-B-Q sauce, I sprinkled some green onions over the top and my grilled creation was complete.
In every bite of these Grilled Stuffed Sweet Peppers, you get the crunch of slightly sweet peppers, the char of grill marks, the smokey flavor of Stubb’s Bar-B-Q sauce and just the right amount of tang that French’s Classic Yellow Mustard delivers. It’s seriously a flavor combination that will keep you coming back for more.
If you only make one bar-b-q recipe this summer, I encourage you to make it this one! While it’s somewhat outside of what you may traditionally think of when you thing bar-b-q, it’s seriously one of the most delicious dishes I’ve created all summer long and I couldn’t have made it without the trusted flavors of Stubb’s Legendary Bar-B-Q Sauce and French’s Classic Yellow Mustard.
