When it comes to cooking on busy school nights, I really want meals that take 30 minutes or less to cook. In my home, a great meal generally includes a protein, a vegetable and some grains. But y’all, cooking grains can be time consuming. It can be tricky. And, truthfully, occasionally it can be flavorless. But I’ve found the perfect shortcut that’s simplifying my cooking style while allowing me to put fast and nutritious meals on the table with a little help from TruRoots Quick Cook Grains. - 2 packages of TruRoots Quick Cook Grains Spanish Style Quinoa, Brown Rice and Red Bean Blend
- 6 boneless, skinless chicken thighs
- 3 tablespoons of dried oregano
- 1 tablespoon of paprika
- 1 tablespoon of dried thyme
- 1 tablespoon of red pepper flakes
- 2 tablespoons of fresh basil (chopped)
- ¼ cup of olive oil
- ½ of a lemon
- 1 pound of fresh asparagus
- Add the oregano, paprika, thyme, red pepper flakes, half of the basil, olive oil and juice from the lemon to a bag.
- Place the chicken in the bag and massage with the seasonings.
- Heat the grill to high heat and sear the chicken for five minutes per side until the interior temperature is 160 degrees.
- Remove the chicken from the grill and allow it to rest.
- Cook the TruRoots Quick Cook Grains Spanish Style Quinoa, Brown Rice and Red Bean Blend according to the directions and spread out on a serving dish.
- Top with grilled asparagus and the chicken thighs.
- Garnish with the remaining basil and serve.
These Spanish Style Grilled Chicken Thighs with Quick Cook Grains is a dish that’s easy, flavorful and absolutely perfect for busy weeknights. To start, I added my oregano, paprika, thyme, red pepper flakes, half the basil, olive oil and the juice from my lemon to a bag.
Then I simply placed my boneless, skinless chicken thighs in the bag, sealed it and massaged the marinade into the chicken. As a side note, you can cook immediately after seasoning or you can make it earlier in the day and allow it to marinate. I’ve tried both ways and it’s great either way.
Once I was ready to cook my chicken thighs, I heated my grill to high heat and placed the chicken thighs directly onto the grill. I allowed them to cook for five minutes on each side, until the seasoning had formed a tasty crust and the interior temperature of the chicken was 160 degrees.
