I’m a SO happy that it’s fall ya’ll. Not only is the weather finally beautiful with cooler temperatures and changing leaves but some of my favorite flavors just happen to be fall flavors. I love incorporating delicious ingredients that have that fall feel into easy dishes that I can feel great about serving my family. So, with that in mind, I have of course been in the kitchen trying my hand at sides, main dishes and simple creations that are sure to satisfy while totally capturing the taste of fall. Now, I’ll be honest and say that I’ve been trying this and experimenting with that but my go-to for quick, easy and wholesome meals has become TruRoots Quick Cook Grains. I’ll tell you more about them in a minute (cause I’ve been using them, like, daily) but first, I want to show you a little dish that I whipped up that’s perfect for cool fall nights, would be stunning to serve at your Thanksgiving celebration and is just right for just any old time that you want something deliciously simple. Get ready to discover your favorite new fall dish with these Apple, Quinoa and Brown Rice Stuffed Acorn Squash that can be made in no time at all and are totally satisfying!
Now, I’m gonna just tell you before we get started with my easy recipe that TruRoots Roasted Garlic Quinoa and Brown Rice Blend is what makes this dish, well, delish. Even better, creating the filling for these stuffed acorn squash is as easy as tear, microwave and serve. While I serve every one of these varieties as a side dish on the regular, I also love incorporating them into easy recipes that use the flavorful Quick Cook Grains to create meal time perfection. In fact, with fall flavors in mind, I decided to take my favorite TruRoots variety which just happens to be Roasted Garlic Quinoa and Brown Rice Blend (give me all the garlic ya’ll) and pair it with fresh fall flavors like ripe apples and crunchy walnuts and stuff it into cooked acorn squash. It turned out so fabulously delicious that I’ve already added it to my Thanksgiving (and Christmas) menu so it only seemed right to share this can’t miss dish. Here’s how you make it!
- 2 packages of TruRoots Roasted Garlic Quinoa and Brown Rice Blend
- 1 large apple
- ½ cup of chopped walnuts
- 2 acorn squash
- 1 teaspoon of olive oil
- ½ cup of cheese
- Freshly chopped Rosemary (for garnish)
- Half the acorn squash and remove all seeds.
- Brush each half with olive oil.
- Place the acorn squash cut side down on a baking sheet and bake at 400 degrees for 30 minutes.
- While the acorn squash are baking, cut the apple into cubes and saute for five minutes in olive oil.
- Cook the TruRoots Roasted Garlic Quinoa and Brown Rice Blend in the microwave.
- Mix together the TruRoots Roasted Garlic Quinoa and Brown Rice Blend, cooked apples and walnuts in a bowl.
- When the squash are done cooking, fill each one with the mixture.
- Top with a sprinkling of cheese and fresh Rosemary.
- Serve immediately.
These Apple, Quinoa and Brown Rice Stuffed Acorn Squash are so easy to make and they are quite an impressive dish if I do say so myself. I consider them a 30 minutes meal because they can be made quickly but they are even faster if you roast your acorn squash in advance (which I do once a week). To start, I cut my acorn squash in half and removed all the seeds.
Next, I brushed the cut portion of my acorn squash with olive oil and placed them cut side down on a baking sheet. *Tip: Slice off a small portion of tht bottom of the acorn squash to ensure it will sit flat once baked.
I popped my acorn squash into the oven on 400 degrees for 30 minutes and then went about my day. Like I mentioned earlier, you can do this step way in advance to ensure that when it comes to time assemble the Apple, Quinoa and Brown Rice Stuffed Acorn Squash, they are ready in minutes. Once my acorn squash were almost ready, I diced up my apple and sauteed it for about five minutes in a little olive oil. My goal was to keep the apple crisp but warm the pieces at the same time.
Once my apple was cooked perfectly, I squeezed my bags of TruRoots Roasted Garlic Quinoa and Brown Rice Blend, tore off the top and microwaved them. Since this already perfectly seasoned quinoa and brown rice mixture only takes 60 seconds to cook, it made bringing this dish together super easy! Plus, with the garlic taste already perfectly added to the easy-open bags, I didn’t have to worry about seasoning and still knew that I would achieve tasty perfection.
Once my TruRoots Roasted Garlic Quinoa and Brown Rice Blend was cooked, I added my apples, the quick cook grains and my walnuts to a bowl and mixed them together.
Then I filled each of my cooked acorn squash halves with the mixture, really adding plenty in so that every bite would give my family and guests a flavorful experience they would never forget.
I finished off my Apple, Quinoa and Brown Rice Stuffed Acorn Squash by sprinkling a little cheese over the top and adding some chopped Rosemary and they were ready to serve.
Let me tell you, this dish is absolutely drool-worthy and nobody will believe how simple it is to make since I used TruRoots Roasted Garlic Quinoa and Brown Rice Blend and saved myself a ton of time while adding it amazing flavor.
