Life is always busy for my family but during the holiday season, things really get crazy. With both of the boys playing basketball, a calendar full of parties and events and shopping to be done, it feels like we’re always running somewhere this time of year. Now, don’t get me wrong…. I actually enjoy the hustle and bustle of the holiday season. However, as mom who makes it her mission to have family dinners at home pretty much every night of the week, coming up with meals that are quick, satisfying and family favorites can be quite the challenge during the holiday season. However, thanks to Publix – there is one meal that has become my holiday go-to dish my entire family always comes running for: Barber Foods® Chicken Parmesan Stuffed Chicken Breasts paired with Pesto Zoodles!
This perfect holiday meal is perfectly simple (score!) and is a family favorite in my home. Truthfully, it’s not a meal we’re new too. In fact, Barber Foods Chicken Parmesan Stuffed Chicken Breasts have been a staple in my home for quite a while. My oldest son begs for them and it’s a simple dish that my youngest (picky) son actually enjoys so let’s just say that I always have Barber Foods Chicken Parmesan Stuffed Chicken Breasts as well as their cousins Barber Foods Cordon Bleu Stuffed Chicken Breasts and Barber Foods Broccoli & Cheese Stuffed Chicken Breasts stocked in my freezer.

But during the holidays, well, this family favorite becomes a staple. You see, I can pick it up in boxes of 2 stuffed chicken breasts during my weekly trip to Publix (you can find it the Frozen Poultry Section) and pair it with a simple veggie to create a dinner that’s amazing!
Better yet, since Barber Foods Chicken Parmesan Stuffed Chicken Breasts are a pre-made option that takes high-quality chicken and hand-stuffs it with the finest cheeses, I have to spend very little time and exert very little effort to put a dinner on my family’s table that we can all be excited about. Just in case you need a little inspiration (I know the holiday season has got everyone’s brains spinning), let me show you exactly how I do it! But first, let me set the stage with our typical holiday afternoon. The kids have gotten out of school and had sports practice. We have a holiday program on the schedule for which everyone needs to be presentable in less than an hour and all I can hear is choruses of “we’re hungry!”. So, what does this smart mama do (yes, I am patting my own self on the back!). I send them to shower and dress while I prepare a dinner that tastes made-from-scratch but is easy peasy because the main dish is a frozen entree that makes dinner feel fancy even when it’s far from it! To start, it’s as easy as pulling two boxes of Barber Foods Chicken Parmesan Stuffed Chicken Breasts out of the freezer. These perfectly sized boxes that I purchase at Publix are just right because I can customize how many servings, I need to feed either just the boys, the boys and myself or all of us.
Once I’ve pulled out my Barber Foods Chicken Parmesan Stuffed Chicken Breasts that are made from chicken that is raised with no hormones and tastes like something I would make from scratch (if I ever had time!), I’m able to pop them into the oven and start making my pesto zoodles which pair with these stuffed chicken breasts perfectly.
While my Barber Foods Chicken Parmesan Stuffed Chicken Breasts are in the oven doing all the hard work for me and cooking into a dinner that’s uh-mazing, I simply use my veggie spiralizer to cut three large zucchinis into perfectly shaped veggie noodles (AKA zoodles!).
They immediately go into a sauté pan with about a tablespoon of oil on medium-heat and cook for about 5 minutes, just long enough to soften them up while still leaving them with a little bit of crunch. Then I simply mix in a tablespoon of pesto sauce and combine everything well. Easy, right?
With my pesto zoodles made, I’m able to get dressed and make myself presentable just in time to hear the timer go off on my oven, alerting me that my Barber Foods Chicken Parmesan Stuffed Chicken Breasts are cooked to perfection. Knowing that my meal is on point when it comes to flavor, all I have to do is plate my pesto zoodles with a sprinkle of Parmesan cheese on top, add a little smear of marinara (I watch way too many cooking shows!) and place my delicious Barber Foods Chicken Parmesan Stuffed Chicken Breasts next to the zoodles.
A quick garnish of parsley on my chicken and I’ve got a meal that’s seriously delicious and seriously impressive. I kinda think it’s an added bonus that my plate is rocking a holiday color scheme as well! In fact, there’s nothing about this dish that is not to love and as I serve it up, I have no problem keeping my secret of how simple this meal is and accepting tons of praise on delivering a totally drool-worthy dinner that everyone in my family adores.
As my guys cut into their delicious, high-quality chicken breasts that are hand-stuffed with the finest cheese, there isn’t much conversation because, truthfully, everyone is too busy savoring the flavors that make this season simply delicious and I can’t say that I blame them. You see, with Barber Foods Chicken Parmesan Stuffed Chicken Breasts, I don’t ever worry that dinner will be anything less than fabulous because I know from my own love of these stuffed chicken breasts that no matter what I pair them with, they are the simplest and most delicious way to turn even the busiest holiday week night into a special meal that’s perfect.
Once dinner is over and our Barber Foods Chicken Parmesan Stuffed Chicken Breasts and pesto zoodles have disappeared, we’re out the door and ready to get festive with any number of holiday activities because we’ve had a dinner together that was truly unforgettable. And that, my fellow moms, is what the holiday are all about!
