Mac and Cheese is one of my family’s favorite meals. It’s a great side, a fantastic main dish and now, it’s easier than ever to make. I’ll be honest and tell you that I’ve made my own Mac and Cheese for as long as I can remember. For me, there’s just something about the homemade creaminess that’s comforting. Since both of my boys agree, this has become a weekly staple in our home. However, it can be time consuming to whip up this delicious dish from scratch…until now! With this One Pot Creamy Mac and Cheese recipe, I’m able to whip up rich, creamy, delicious homemade mac and cheese in 20 minutes and in one single pot (woo hoo for less dishes!).
Let me start by saying this easy recipe tastes so amazing. It’s a great comfort food or an easy side that pairs well with, well, anything! And the best part is, it takes less time to make this from scratch version of one pot creamy mac and cheese than it does to heat up a pre-made option in the oven. Plus, you probably already have all the ingredients for this easy dish in your pantry and refrigerator. So, let’s just jump right in and I’ll show yo how to make this easy staple that’s a favorite in my home.
- 1 box of macaroni
- 4 tablespoons of unsalted butter
- 1 small can (5 ounces) of evaporated milk
- 2 eggs
- 1 teaspoon of pepper
- 4 cups of shredded cheese
- Boil the macaroni according to the directions on the package.
- Drain, return to the pot it was cooked in and toss it in the butter.
- Beat together the eggs, evaporated milk and pepper.
- Turn the heat down to low and slowly mix in the egg mixture, stirring so that the eggs don't scramble.
- Once all of the egg mixture is add, pour in the cheese and cook for 2-3 minutes while stirring until the cheese melts.
- Top with an additional sprinkle of cheese and serve immediately.
I’m seriously telling you, this one pot creamy mac and cheese is so simple to make! There’s no need to make a roux and it basically boils down to adding a few simple ingredients to the pot in the right order. To start, I cooked my macaroni according to the directions on the package. Then I drained it and returned the cooked macaroni to the pot.
Next, I added my butter and allowed it to melt in with the macaroni while I moved on to my next step.
While the butter was melting, I whisked together my evaporated milk, eggs and pepper. Then I reduced the heat of my stove to low and mixed in the egg mixture a little at a time.
As a side note, it’s important to do this step slowly so that the eggs don’t scramble. Go very slowly and stir the whole time. Once all of the egg mixture is added and the macaroni is coated, I pour in my cheese and continue cooking for 2-3 minutes while stirring and allowing my cheese to melt. Once the cheese is completely melted, all that’s left to do is sprinkle a little more cheese on top and serve up this tasty dish!
While it only takes 20 minutes to make this one pot creamy mac and cheese, the taste of it is not soon forgotten. It’s warm and gooey and a completely comfort food that has cheesy flavor in every bite.
