Green Bean Casserole has always been a part of my holiday celebrations. From Thanksgiving to Christmas to regular weeknight meals in between, it’s a dish that I really make year round but make very often during the holiday season. I’ve always loved traditional green bean casserole made with cream of mushroom soup and crunchy onion rings and I’ll be honest, I’ve missed it since going Keto. I’ve tried a variety of substitutions but they just haven’t been as good….until now. While I’ve made multiple green bean casseroles that are low in carbs, I’ve finally discovered how to make the very best Keto Green Bean Casserole that turns out perfect each and every time.
Trust me when I say this Keto Green Bean Casserole is the very best Keto option of this beloved dish. With it’s creamy texture, the crunch of bacon and it’s flavorful ingredients, it’s so very good. Even better, it’s so quick and easy to make. Let me show you exactly how I do it.
- 4 cups of fresh green beans
- 1 tablespoon of minced garlic
- 1 sweet onion
- 4 ounces of cream cheese
- 1 cup of beef stock
- 1 cup of shredded sharp cheddar cheese
- 4 pieces of bacon (pan-fried)
- 1 tablespoon of avocado oil
- Add the oil and garlic to a saute pan and brown.
- Add in the sliced onion and green beans and cook over medium heat for 10-12 minutes until the green beans and onions begin to soften.
- Pour in the beef stock and melt in the cream cheese, stirring constantly.
- Transfer the mixture to a casserole dish.
- Top with the shredded cheese and cook at 350 degrees for 15 minutes.
- Remove the green bean casserole from the oven and top with fried bacon.
- Serve immeiately.
I think my favorite part about this Keto Green Bean Casserole recipe is the fact that is uses fresh green beans and tangy cream cheese to create a taste that’s just unforgettable. To start, I added my avocado oil and garlic to a saute pan and browned it for about minutes. Then I immediately added in my green beans and sliced sweet onion and sauted them together for 10-12 minutes, until the green beans begin to soften but still had a crunch to them.
When my green beans and onions are just about cooked, I poured in my beef stock and added my cream cheese, mixing it all together over medium heat until the cream cheese was melted and combined with the beef stock to form a semi-thick sauce.
Once I had all the ingredients well combined, I transferred my Keto Green Bean Casserole to a casserole dish.
Then I topped it with my shredded sharp cheddar cheese.
After baking my Keto Green Bean Casserole at 350 degrees for 15 minutes (the cheese on top will be melty and brown), I removed it from the oven, topped it with my pieces of fried bacon and served it immediately.
