OK ya’ll. Truth time. I love living the Keto lifestyle but honestly, there are times that I miss my sweets. I know there are tons of Keto-friendly sweets out there but really, I try to stay away from them as much as possible. However, give me a good peanut butter cookie any day of the week and I’m one happy mama. For me, the perfect peanut butter cookie is creamy and sweet and has just a little bit of crunch. Knowing that this is one treat that I’m never going to give up, I decided to come up with the perfect recipe for Keto Crunchy Peanut Butter Cookies that are totally delicious and just right for satisfying that sweet tooth in the most amazing way!
So first, let’s talk the endless debate between crunchy and creamy peanut butter. Keep in mind that if you’re team creamy (what’s wrong with you….just kidding!), you can totally substitute creamy peanut butter in this recipe. But really, why would you? The crunch of these Keto Crunchy Peanut Butter Cookies is just divine. Now that we’ve got that out of the way, let’s talk peanut butter on the Keto diet. There are some that will tell you peanut butter is not Keto friendly. I am not one of those people. As long as you find a high quality peanut butter that is ONLY peanuts and salt (I prefer Santa Cruz Organic) and use it in moderation, you’re golden! Be sure to keep an eye on your nutritional labels however and steer clean of those peanut butters that are loaded with sugar!
Not that we’ve got those points out of the way, why don’t we make these Keto Crunchy Peanut Butter Cookies that are seriously going to knock your socks off!
- 1 cup of crunchy Keto-friendly peanut butter
- ½ cup of Confectioner's Sugar replacement
- 1 egg
- 1 teaspoon of vanilla extract
- 8 drops of liquid stevia
- Preheat the oven to 350 degrees and spray your cookie sheet or line it with a baking mat.
- Mix together the crunchy peanut butter, confectioner's substitute, egg, vanilla and stevia until it is well combined.
- Using a small cookie scoop, scoop out the cookies onto the prepared baking sheet.
- Using a fork, push down gently to flatten the cookies in both directions.
- Bake the cookies for 12-15 minutes or until they are golden brown.
- For an extra pop of peanut butter, mix 1 tablespoon of peanut powder, a teaspoon of water and a few drops of liquid stevia and drizzle it over the top.
These Keto Crunchy Peanut Butter Cookies taste amazing but even better, they are so simple to make. You seriously DON’T have to be a baker to whip up this sweet treat! To start, I added my crunchy peanut butter, confectioner’s sugar substitute, egg, vanilla extract and liquid stevia drops to a bowl and combine them well.
Once the ingredients are combined, us a small cookie scooper to scoop out Keto Crunchy Peanut Butter Cookie balls onto the prepared cookie sheet.
Next, using a fork, flatten out the cookies by pushing the fork down gently into the cookies and then repeating the process again to form a cross.
Bake the cookies for 12-15 minutes at 350 degrees, until the edges are golden and the Keto Crunchy Peanut Butter Cookies hold their shape. Once the cookies are baked completely, remove them from the oven and cool them on a cooling rack for at least 15 minutes.
Now, you can stop here and enjoy the Keto Crunchy Peanut Butter Cookies BUT if you want to take things a step further, read on. I’ve already admitted that I LOVE peanut butter so while my cookies were cooling, I mixed together a tablespoon of peanut butter powder, a teaspoon of water and a few drops of liquid stevia.
Then I simply drizzled this mixture over the top of my Keto Crunchy Peanut Butter Cookies for an extra peanut butter pop that is so satisfying!
I can’t tell you enough how amazingly delicious these Keto Crunchy Peanut Butter Cookies are.
They are just the right size to grab when you need a little something sweet and with just 2 net carbs per cookie, there’s no worry that they won’t fit in with your macros for the day!
