Easy Lemon Blueberry Cheesecake Waffles

These Lemon Blueberry Cheesecake Waffles and a sinfully delicious breakfast that can be whipped up in minutes...minus all the guilt!
  • 8 Kodiak Cakes Power Waffles (Buttermilk and Vanilla Flavor)
  • 2 Cups of Dole Frozen Blueberries
  • ⅓ Cup of Water
  • 2 Tablespoons of Calorie Free Sweetener
  • 4 Ounces of Cream Cheese (Softened)
  • 1 Container of Chobani Smooth Yogurt in Vanilla
  • ½ Lemon
  • 2 Tablespoons of Calorie Free Confectioner's Sugar Substitute
  1. Start by adding your Dole Frozen Blueberries, water and calorie free sweetener to small saucepan.
  2. Bring your blueberries to a boil and then turn down the heat, allowing them to simmer.
  3. While your blueberries are cooking, add the cream cheese, yogurt, lemon and confectioner's sugar substitute to a small bowl and mix well.
  4. Add your Kodiak Cakes Power Waffles to the toaster and cook them until they are warm and crispy.
  5. Top 2 waffles with 2 tablespoons of the yogurt mixture.
  6. Drizzle 2 tablespoons of the blueberry mixture over the top.
  7. Garnish with a lemon slice and enjoy!
