Buttery Skillet Potatoes with Ham and Peas

These Buttery Skillet Potatoes with Ham and Peas are an Easter dinner essential that are bursting with flavor.
  • 8 tablespoons of Salted Plugrá butter
  • 6 large potatoes
  • 1 cup of diced ham
  • 1 cup of fresh or frozen peas
  • ½ cup of diced sweet onion
  • ½ cup of shredded cheese
  • ½ cup of heavy cream
  • 1 cup of crushed buttery crackers
  • Salt and pepper to taste
  1. Using the Plugrá butter, coat a large cast iron skillet.
  2. Peel the potatoes and slice them into 1-inch thick pieces.
  3. Going in a circular motion, line the bottom of the pan with potato slices.
  4. Top the potatoes with pats of butter (2 tablespoons)
  5. Top with half of the ham cubes, peas, onions and cheese.
  6. Repeat the process to create a second layer of potatoes and top with pats of butter (2 tablespoons)
  7. Again, top with ham cubes, peas and onions.
  8. Mix together the heavy cream, 1 tablespoon of melted butter, salt and pepper.
  9. Pour it over the top of the potato mixture.
  10. Sprinkle on remainder of the cheese.
  11. Crush the crackers and pour in the last of the Plugrá butter. Mix well.
  12. Spoon the cracker mixture over the top of the potato dish.
  13. Cook at 350 degrees Fahrenheit for one hour or until potatoes are soft.
  14. Remove from the oven, allow to cool slightly and serve with Easter dinner.
