Veggie Pesto Red Lentil Penne

This Veggie Pesto Red Lentil Penne is a combination of fresh vegetables, plant-based pasta and a creamy pesto sauce that will leave you begging for seconds.
  • 1 box of Barilla Red Lentil Penne
  • 1 tablespoon of extra virgin olive oil
  • 2 cups of chopped broccoli florets
  • 1 and ½ cup of chopped asparagus
  • 1 cup of cherry tomatoes (cut in half)
  • 2 tablespoons of pesto sauce
  • Parmesan cheese and fresh basil for garnish
  1. Cook the Barilla Red Lentil Penne according to the instructions on the box.
  2. Reserve ½ cup of the water you cooked the pasta in and then drain the rest and set aside.
  3. Add the extra virgin olive oil to a sauté pan and add in the broccoli and asparagus.
  4. Cook until the veggies are tender (about 5 minutes).
  5. Add the cooked Barilla Red Lentil Penne back into the pan.
  6. Add in the pesto sauce and the reserved pasta water.
  7. Toss gently until the veggies and pasta are covered evenly.
  8. Add in the cherry tomatoes and toss.
  9. Garnish with Parmesan cheese and basil and serve immediately.
