Cream Cheese Pink Velvet Muffins

These Cream Cheese Pink Velvet Muffins are a fun way to add a little sweetness to your Valentine's Day breakfast.
  • For the Muffins
  • 2 and ½ cups of flour
  • 1 and ¼ cup of sugar
  • 4 teaspoons of baking powder
  • 1 teaspoon of salt
  • ⅓ cup of sour cream
  • ¼ cup of milk
  • 2 teaspoons of pink gel food coloring
  • 1 cup of vegetable oil
  • 2 large eggs
  • 8 ounces of cream cheese
  • For the Topping
  • ¼ cup sugar
  • ¼ cup flour
  • 1 tablespoon of unsalted butter
  1. Preheat the oven to 374 degrees.
  2. Whisk together the flour, sugar, baking powder and salt in your mixer.
  3. Add in the sour cream, food coloring, oil, milk and eggs and mix until the ingredients are just combined.
  4. Grease a muffin pan and fill each tin ¾ of the way full with the pink velvet muffin mixture.
  5. Cut cubes of cream cheese and push them gently down into the middle of the muffins.
  6. Add the topping ingredients to a pulse mixer and combine well.
  7. Sprinkle the topping evenly on the muffins.
  8. Bake for 20-22 minutes, until a toothpick inserted in the middle comes out clean.
  9. Allow the muffins to cool slightly before removing them from the pan.
  10. Enjoy immediately or freeze for later.
