Easy Low Carb Meatloaf Recipe

This easy Low Carb Meatloaf is full of flavor but has less than 4 net carbs per serving.
  • 2 pounds of 80% lean ground hamburger meat
  • ½ of a small sweet onion (diced)
  • 1 egg
  • ½ cup of almond flour
  • ¼ cup of shredded cheese
  • ¼ cup of sugar free ketchup
  • ¼ cup of sugar free hickory barbecue sauce (plus more for topping if desired)
  • Salt and Pepper to taste
  1. Add the ground meat, diced onion, egg, almond flour, cheese, ketchup and barbecue sauce to a bowl and mix it all together with your hands until it is well combined.
  2. Season with salt and pepper as desired.
  3. Grease a 9 x 13 glass pan and push the mixture evenly down into the pan.
  4. Bake at 350 degrees for 50 minutes.
  5. Remove from the oven, drain the grease and cover with additional barbecue sauce if desired.
  6. Cook for an additional 12 minutes.
  7. Allow to cool slightly and serve.
