How to Make the Fluffiest Streusel Topped Blueberry Muffins

- For the Muffins
- ½ cup of white sugar
- ¼ cup of light brown sugar
- ½ cup of butter
- 2 eggs
- 1 teaspoon of vanilla extract
- 2 cups of all-purpose flour
- 2 teaspoons of baking powder
- ½ teaspoon of salt
- ⅓ cup of milk
- 2 tablespoons of sour cream
- 2 cups of blueberries
- For the Streusel Topping
- 2 tablespoons of flour
- 2 tablespoons of brown sugar
- ½ tablespoon of white sugar
- ⅓ teaspoon of ground cinnamon
- 2 tablespoons of butter (grated)
- In the bowl of a mixer, cream together the butter and two types of sugar until they are light and fluffy.
- Beat in one eggs at a time.
- Add the vanilla extract.
- In a separate bowl, sift together the flour, baking powder and salt.
- Add ½ of the flour mixture to the butter/sugar mixture and mix.
- Add the milk, continuing to mix.
- Add the remainder of the flour mixture to the batter along with the sour cream.
- Mix until well combined.
- Gently fold in the blueberries.
- Spoon the prepared batter into your greased or lined muffin tins.
- Grate the butter and mix it with the flour, sugars and cinnamon until combined.
- Sprinkle the mixture evenly on top of each of the muffins.
- Bake on 375 degrees for 25 minutes.
- Cool and enjoy.
