How to Make the Fluffiest Streusel Topped Blueberry Muffins

These fluffy streusel topped blueberry muffins are light and delicious thanks to a simple secret ingredient.
  • For the Muffins
  • ½ cup of white sugar
  • ¼ cup of light brown sugar
  • ½ cup of butter
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 2 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • ½ teaspoon of salt
  • ⅓ cup of milk
  • 2 tablespoons of sour cream
  • 2 cups of blueberries
  • For the Streusel Topping
  • 2 tablespoons of flour
  • 2 tablespoons of brown sugar
  • ½ tablespoon of white sugar
  • ⅓ teaspoon of ground cinnamon
  • 2 tablespoons of butter (grated)
  1. In the bowl of a mixer, cream together the butter and two types of sugar until they are light and fluffy.
  2. Beat in one eggs at a time.
  3. Add the vanilla extract.
  4. In a separate bowl, sift together the flour, baking powder and salt.
  5. Add ½ of the flour mixture to the butter/sugar mixture and mix.
  6. Add the milk, continuing to mix.
  7. Add the remainder of the flour mixture to the batter along with the sour cream.
  8. Mix until well combined.
  9. Gently fold in the blueberries.
  10. Spoon the prepared batter into your greased or lined muffin tins.
  11. Grate the butter and mix it with the flour, sugars and cinnamon until combined.
  12. Sprinkle the mixture evenly on top of each of the muffins.
  13. Bake on 375 degrees for 25 minutes.
  14. Cool and enjoy.
