Easy Layered Christmas Cake

This Easy Layered Christmas Cake pairs a doctored up boxed cake mix with layers of pudding and whipped cream to create simple holiday perfection.
  • 1 box of red velvet cake mix
  • 2 eggs
  • ¼ cup of water
  • ¼ cup of oil
  • 2 tablespoons of sour cream
  • 1 small box of vanilla pudding
  • 2 small boxes of cheesecake pudding
  • 4 cups of milk
  • 2 cups of heavy whipping cream
  • Green food coloring
  • Sprinkles and white chocolate chips for garnish
  1. Combine the red velvet cake mix, eggs, oil, water, sour cream and vanilla pudding.
  2. Pour into a greased baking dish and cook according to the directions on the box.
  3. Once the cake is cooked (it will still be slightly jiggly in the middle but a toothpick inserted will come out clean), chill the cake in the refrigerator for one hour.
  4. Once the cake is cool, whip together the two boxes of cheesecake pudding and the milk until they begin to thicken.
  5. Spread the cheesecake pudding over the top of the cake.
  6. Add the heavy whipping cream to the stand mixer and whip until peaks begin to form.
  7. Add in the green food coloring and combine.
  8. Spread the green whipped cream over the cheesecake pudding layer.
  9. Top with sprinkles and white chocolate chips and serve immediately or refrigerate.
