These Keto Crunchy Peanut Butter Cookies will totally satisfy your sweet tooth while only having 2 net carbs per cookie.
Ingredients
1 cup of crunchy Keto-friendly peanut butter
½ cup of Confectioner's Sugar replacement
1 egg
1 teaspoon of vanilla extract
8 drops of liquid stevia
Instructions
Preheat the oven to 350 degrees and spray your cookie sheet or line it with a baking mat.
Mix together the crunchy peanut butter, confectioner's substitute, egg, vanilla and stevia until it is well combined.
Using a small cookie scoop, scoop out the cookies onto the prepared baking sheet.
Using a fork, push down gently to flatten the cookies in both directions.
Bake the cookies for 12-15 minutes or until they are golden brown.
For an extra pop of peanut butter, mix 1 tablespoon of peanut powder, a teaspoon of water and a few drops of liquid stevia and drizzle it over the top.
