Now that summer is drawing to a close and it’s back-to-school time, I’m back in the kitchen coming up with fun ideas that are sure to fuel my busy family after days packed full of learning, sports and more. I’ll be honest and say that my guys get tired of the same old thing every night and because of this, I challenge myself to think outside the box and come up with recipe ideas that are unique and delicious. Sometimes this means switching up ingredients and sometimes it means taking two totally different types of food and combining them to create an unforgettable meal. In my home, no matter what I’m cooking, I like to keep things cheesy, because, well CHEESE! Any of you who have followed my recipes for a while know that for me Sargento® cheese is my jam. That’s why I recently stocked up on a variety of Sargento Slices from Harris Teeter and allowed them to inspire me to mix up dinner time. Now, my family no longer has to decide between Taco Tuesday and Pizza Wednesday and can instead combine these two favorite dishes while they enjoy my Grilled Taco Flatbread Pizza.
Now, before we get to the recipe for this seriously yummy and oh-so-fun Grilled Taco Flatbread Pizza, let’s talk a little bit more about cheese why don’t we? As any good cheese lover knows, adding cheese to a variety of dishes is the equivalent of adding a cherry to the top of your milkshake. It’s a delicious way to take regular recipes and make them ooey, gooey and delicious. For my family, Sargento Slices are a must on any number of dishes from burgers to hotdogs to chicken and more. That’s why when I was recently shopping at Harris Teeter, I decided to pick up a variety of Sargento Slices, that are 100% Real, Natural Cheese. So now that you’ve got Sargento Slices added to your weekly shopping list, let’s make that Grilled Taco Flatbread Pizza why don’t we?
- 1 and ½ cups of warm water
- 2 teaspoons of honey
- 1 Tablespoon of quick rise yeast
- 4 cups of flour
- 1 teaspoon of salt
- 2 Tablespoons of olive oil
- 1 cup of refried beans
- 1 pound of hamburger meat
- 1 Tablespoon of taco seasoning
- ¼ cup of water
- 12 slices of Sargento Sliced Sharp Cheddar Cheese
- 1 cup of cubed avocado
- ½ cup of sour cream
- ¼ cup of sliced black olives
- ¼ cup of pico de gallo
- 2 Tablespoons of chopped cilantro
- Add the warm water, honey and yeast to a bowl and allow to set for fifteen minutes.
- Mix in two cups of flour, cover with plastic wrap and set in a warm, dry place for two hours.
- Mix in the additional two cups of flour, salt and olive oil and mix with a bread hook for 5 minutes.
- Cover and set in a cool, warm place for two more hours or until the dough has doubled in size.
- Cut the dough into four sections and roll into balls.
- On a floured counter, roll out each of the balls, leaving a thicker area around the edges.
- Brush each side of the rolled-out dough with olive oil.
- Heat your grill to high heat and place the flatbread directly on the grill.
- Reduce the heat to medium-low and cook for about five minutes per side.
- While the bread is cooking, brown the hamburger meat and add in the taco seasoning and water.
- Cook until the water is reduced and set aside.
- Remove the flatbread from the grill and layer with refried beans, seasoned hamburger meat and 3 slices of Sargento Sliced Sharp Cheddar Cheese per flatbread.
- Return the flatbread to the grill for long enough to melt the cheese (about 2-3 minutes).
- Carefully remove the finished flatbread pizza from the grill and top with avocado, sour cream, black olives, pico de gallo and cilantro.
This recipe for Grilled Taco Flatbread Pizza uses a simple flatbread dough recipe paired with taco ingredients and tangy sharp cheddar cheese to create dinner time perfection. I could not imagine using any other cheese besides Sargento Sliced Sharp Cheddar Cheese on it because it perfectly complements the fun flavors and completes this dish to perfection. To start, I needed to create my flatbread dough (As a shortcut, you can buy prepared flatbread and skip ahead to adding the toppings but trust me when I say making this recipe from scratch is SO worth it). I make my flatbread dough in stages so that it fits in with my schedule. To start I added my warm water, honey and yeast to a bowl and allowed it to set for fifteen minutes.
Once my yeast had proofed, I mixed in two cups of the flour and combined it well. Then I covered it with plastic wrap and set it in a warm, dry place for about an hour. Once my hour was up, I added two more cups of flour, my salt and my olive oil and used a bread hook to knead the dough for about five minutes. Once it was kneaded, I placed it back in the bowl, covered it again and put it back in a warm, dry place for another hour. Finally, after my dough had risen to double its size, I beat it down with my fists, cut it into four equal parts and rolled each part out into a flatbread shape, keeping the edges slightly thicker than the middle.
After brushing each side with olive oil, I placed my flatbread on a heated grill and cooked it for about five minutes on each side, long enough for the bread to cook through completely.
While my flatbread was cooking, I browned my hamburger beef, added in my taco seasoning and water and reduced it until the liquid had evaporated. Next, I removed the cooked flatbread from the grill (always cook your flatbread completely before adding toppings) and layered on refried beans and seasoned meat.
Finally, I was ready to add the ingredient that really makes this dish amazing…. the Sargento Sliced Sharp Cheddar Cheese. Now I know you may be wondering why I chose cheese slices instead of shredded cheese and sharp cheddar cheese instead of a Mexican blend, and I’m going to tell you. The slices of Sargento cheese ensured that I’ve got ooey, gooey pockets of cheesy goodness covering my pizza and the truth is, they grill so much better than shredded cheese. Add to that the fact that sharp cheddar cheese adds a little bit of a bite to this recipe, and it’s clearly the perfect choice.
After adding my Sargento Sliced Sharp Cheddar Cheese to the top of each Grilled Taco Flatbread Pizza, I placed them back on the grill for about 2-3 minutes, just long enough to melt the cheese and get the entire flatbread pizza warm and gooey.
I then removed each Grilled Taco Flatbread Pizza from the grill, sprinkled on avocados, sour cream, black olives, pico de gallo and cilantro and immediately served this delicious meal.
Trust me when I tell you that Grilled Taco Flatbread Pizza is a fun way to combine tacos and pizza in a form that your family is sure to adore. I love to slice them up, pair them with a salad and watch them disappear knowing that the flavors in them are uh-mazing thanks to the addition of Sargento Sliced Sharp Cheddar cheese.
