I love making healthy, fresh meals for my family but sometimes the things that I think are good are not exactly the things that my family likes. J-Man and the hubs love cheese. And MillerBug is following in their footsteps. So when I find a meal where I can get bread (carbs), cheese (dairy) and chicken (protein) all into one entree that my family will love I’m all about it! And then I can top it off with a little sour cream (OK, we’re big on dairy) and some green beans for J-Man and and little lettuce for the hubs (gotta get in the greens), I’m one happy camper! Easy Chicken Quesadilla Recipe
You Will Need:
2 Chicken Breasts (cooked and cut into small cubes)
1 Bag of Cheese (I prefer cheddar or Mexican)
Tortilla Shells
Butter
Optional:
Sour Cream
Lettuce
Jalapeno Peppers
Salsa
Cook your chicken and cut in into small cubes. Another great option here is the cooked rotisserie chicken’s that you can find at your local grocery store. You can cut them into small cubes as well. Set out your chicken, cheese and tortilla shells.
Warm your pan on medium-high heat and add a small amount of butter (you can also use cooking spray or olive oil), Gently lay tortilla shell in the pan and layer cheese and chicken on ONE HALF of the tortilla.
Fold the other half of the tortilla over the meat and cheese and press firmly. This will create your quesadilla.
Adjust your heat so that the cheese in your quesadilla will have time to melt without the tortilla shell getting burned. I usually turn mine down to medium heat and let it cook five to seven minutes. You will now want to flip the quesadilla over gently to cook the other side. Your melted cheese will hold it together but still be careful and use a large spatula.
Once both side are browned, removed the quesadilla from the heat and cut into fourths with a pizza cutter or large knife. Garnish with your favorite toppings!
J-Man likes his with sour cream and green beans - I personally like it hot and spicy with jalapenos and salsa! Let each member of the family be creative and make it theirs! Then, sit down and enjoy a great dish that the whole family will love to eat!
