I’m all about the flavors this summer. And just because I’m trying to help my family eat healthier doesn’t mean that I don’t want things to taste, well, fantastic! Since modifying our eating habits, I’ve added a lot of fish to our diet. It’s great for us but not always big on taste. But I’ve found a solution for that! By topping my favorite grilled fish with amazingly delicious peach salsa, I can add a burst of flavor while keeping the calories down! In case you need a little inspiration to turn your fish (or just about anything else) from boring to bursting with flavor, here’s how you can make it too!
What You Will Need
1 Large Ripe Peach
1/2 Onion
1/4 Cup Fresh Cilantro
1 Lime
How to Make It
Wash your peach well and the cut it into cubes. I like to leave the skin on for extra color and texture but you can remove it if preferred. Dice your onion as well and add it to your peach.
Next, wash and chop your cilantro and add it to your mixture. Then squeeze your lime over the top.
Using a large spoon, gently stir your mixture, ensuring that your ingredients are well combined and your lime juice is covering them all evenly. Once your peach salsa is ready, store it in the refrigerator until you are ready to serve it. Then use it to top fish, chicken, burgers and more for a light summer taste that is healthy too!
This salsa brings a burst of flavor to any meal and honestly, it’s good enough to eat alone! It’s one of my favorite ways to take plain meals and make them absolutely delicious and I guarantee you that your whole family will beg for seconds after tasting this simple way to take ordinary foods and make them extraordinary!
