I’ll admit it - anything that can be made in a crock pot is awesome in my eyes. After all, I simply have to put it in and walk away and the rest is done for me. I can come back hours later to a hot meal ready to serve without have to pull out a single pan! But finding crock pot meals that are full of flavor can present a little bit of a challenge. I’ve tried many and often the taste cooks out and my guys give it a big thumbs down. So, I decided to try something new. By adding tons of spicy items and simple ground beef, I was able to turn a boring dish (hamburger casserole) into one that was amazing! Here’s how you can do it too!
What You Will Need
1 Pound of Lean Ground Beef
1 Large Sweet Onion
1 Can of Rotel Tomatoes
1 Can of Cream of Mushroom Soup
1/2 Cup of Sliced Black Olives
1 and 1/2 Cup of 2% Cheddar Cheese
1 Bag of Tortilla Chips
1 Cup of Frozen Corn
How to Make It
Start by browning your hamburger meat. Once it’s completely cooked, drain it and add in your cream of mushroom soup and Rotel tomatoes. Bring your mixture to a boil.
While it is warming, dice your onions and slice your black olives. Then start putting together your casserole. Start by adding a layer of slightly crushed tortilla chips to the bottom of your slow cooker. Top this with a layer of diced onions, a layer of frozen corn, a layer of black olives and a layer of cheese. Add your meat mixture to the top and then repeat the process, using all of your ingredients.
Top your final layer of meat with an additional layer of cheese and then cook on high for three hours.
Once your casserole is ready, serve it warm for a dish that is sure to thrill the whole family! It’s bursting with flavor, has just the right amount of crunch and is sure to satisfy even the pickiest eater!

I always cook mine in the crockpot but I would say 350 degrees for 25 or 30 minutes would do:-)
