How many of you have heard of cookie butter? If you haven’t, you so don’t know what you’re missing. I thought peanut butter was the best things in the world….until I discovered cookie butter at Trader Joe’s. It’s sweet and creamy and just about the most awesome thing around. And while I’m totally not above eating it straight out of the jar with a spoon, earlier this week I decided to do a little test and see how it worked as a main ingredient for cookies! Now, let me warn you - these were so good that the hubby (who’s totally not a sweets person) tried to hide some just to ensure he got his fair share. It’s the first thing I’ve made in a long time that every member of the family just could not get enough of! And of course I’m going to tell you how to make them too!
What You Will Need
1 Cup of Speculoos Cookie Butter
3/4 Cup of Granulated Sugar
3/4 Cup of Dark Brown Sugar
2 Eggs
1/3 Cup of Whole Milk
1/2 Teaspoon of Baking Soda
1/2 Teaspoon of Baking Powder
2 and 1/2 Cup of Flour
How to Make It
Start by setting out your ingredients and eating a little bit of the cookie butter to get you excited about the sweet treat you’re getting ready to make (just kidding - OK, not really).
After your little taste has gotten you in a good mood, preheat the over to 375 degrees and start making your cookie batter. Cream together your cookie butter and sugars and continue to mix them until they are light and fluffy.
Next, mix in your eggs and milk and continue mixing until all ingredients are smooth. Your batter will be a little runny at this point but we’re about to fix that by adding the flour. Mix in your baking powder, baking soda and flour a little at a time, blending your mixture on low and allowing it to completely mix before adding more flour.
Once all your ingredients are well blended and your dough is complete, place it in the fridge for at least an hour to allow it to set. This will make it easier for you to shape your cookies.
Next, remove it from the fridge and pinch off tablespoon sized chunks of dough, rolling them into a ball. Place the dough balls on a prepared cookie sheet.
Now, you can bake your cookies like this or you can use a fork to create a design in the top of them. I found that most of the design bakes out so it’s not super important but does help with the cookies baking evenly. If you want to do this step, gently press your fork into the top of your cookies, creating a criss-cross design.
Bake your cookies for eight minutes or until they are golden brown. They may still look slightly moist in the middle and that is fine.
Once your cookies are done, remove them from the oven and allow them to cool slightly. Then serve them warm with a glass of milk for a sweet treat everyone in your family is sure to love!
