With it being the first day of September, I’m thinking of all things fall…back to school, jeans, boots and of course of one my favorite things ever…apples. Whether it’s to sit on a teacher’s desk or the filling to a perfect pie, apples are a must where I live. Here in the mountains of NC, we’re surrounded by orchards and while some people may be thinking of pumpkin everything right about now, for me it’s apple everything. The fact that this time of year coincides with back to school is no coincidence in my book so I decided to whip up some simple Apple Cookie Pops for my youngest’s class (and his teachers too of course).
What You Will Need:
10-12 Sandwich Cookies (I prefer vanilla for this project)
Lollipop Sticks
1 Bag of Red Candy Melts
1 Tablespoon of Oil
Tootsie Roll Candies
A Stretchy Green Candy (I used Airheads)
How to Make It:
These Apple Cookie Pops are so easy to make and they are seriously so cute. Hint, hint….all your fellow parents will be giving you mad props on your creativity. To start, I pulled my sandwich cookies apart and secured a lollipop stick in each one, using melted candy melts to “glue” the cookie back together. After inserting the stick, I set each prepared pop aside to let it cool completely.
Next, I prepped my decorations. These were pretty simple and actually worked out perfectly. For the apple stems, I cut each small tootsie roll into eight equal pieces.
Then I used a clean Xacto knife to cut a leaf shape out of my green candy. Now, let me say, please, please, please use a stretchy candy for this step as it’s easier to shape and cover up any imperfections.
Once my stems and leaves were ready and my prepared pops were cooled and set, it was time to assemble my Apple Cookie Pops. For my final step, I placed my bag of red candy melts into a bowl and added my oil (it makes it thinner to allow a better finished product). Then I heated it in the microwave until it was almost all melted, checking it about every thirty seconds. *Note: It took roughly one and a half minutes to melt the candy melts.
After stirring my candy melts to a warm liquid consistency, I dipped each of my pops in one at a time, gently rolling them in the candy melts to completely cover my cookie and tapping off any excess gently.
While my candy melts were still in liquid form, I gently pushed my stem into the top and my leaf in next to it, holding them in place for a few seconds so that they could set.
Then back onto a piece of wax paper they went to cool completely.
After allowing them to cool for about twenty minutes, my Apple Cookie Pops were perfectly ready!
They were solid and perfect for little (and big) hands and could either be placed in a container or wrapped up individually.
I have to say, whether gifting them to teachers (they make a GREAT back to school gift) or using them for my son’s upcoming trip to the apple orchard, these Apple Cookie Pops are a cute and creative way to give a sweet twist to this favorite time of the year.
