I’ve been in the kitchen experimenting once again. In this new low carb lifestyle I’m living, I’m eating quite a bit of chicken….which means that my family is eating quite a bit of chicken as well. While (thankfully) we all love grilled chicken, the boys have been asking for me to find ways to add some flavor to this dish recently. Knowing that both my kids adore pizza, I decided to stuff our chicken breasts with pepperoni pizza ingredients and the end result was amazing! In fact, my oldest kept going back for more. These easy low carb pizza stuffed chicken breasts are flavorful, easy and a great addition to any low carb diet.
I’ll be honest and say that when I first planned to make these, I was worried that stuffed chicken breasts would be difficult but that couldn’t be further from the truth. In fact, I think I’ll be stuffing all my chicken going forward because it’s an easy way to add flavor and keep my chicken breasts moist (which, as everyone knows, can be difficult). But back to my low carb pizza stuffed chicken breasts. Let’s get started making them.
- 5 Medium Chicken Breasts
- ¼ Cup of Marinara Sauce
- 15 Pieces of Turkey Pepperoni
- 3 Thick Cut Slices of Fresh Mozzarella Cheese
- 1 Teaspoon of Olive Oil
- Pepper and Garlic Powder (to taste)
- Using a sharp knife, slice into the middle of your chicken breast without cutting all the way through.
- Add two teaspoons of marinara sauce to the pocket of each chicken breast.
- Push 3 pieces of turkey pepperoni and a half of a slice of fresh mozzarella into the pocket.
- Close the chicken breast with a toothpick.
- Place prepared chicken breasts into a baking dish and drizzle with olive oil, pepper and garlic powder.
- Bake on 375 degrees for 30-32 minutes, until your chicken is no longer pink but still juicy.
- Enjoy!
These low carb pizza stuffed chicken breasts are actually crazy easy to make and with the taste of pepperoni pizza paired with the low carb protein of chicken, they are a win for anyone living a low carb lifestyle. To start, I used a sharp knife to cut a pocket into my chicken breasts. I left the ends attached but cut 3/4 of the way through the center of the breast.
Once I had create a pocket for stuffing my chicken breasts, I added two teaspoons of marinara sauce, 3 pieces of turkey pepperoni and a half of a thick cut slice of fresh mozzarella to the middle of each piece of chicken.
Once I had stuffed my low carb pizza stuffed chicken breasts, I used a toothpick to close them back up so that all the goodness inside would not come out during cooking and placed them in a baking dish. Once my chicken was in the dish, I sprinkled my olive oil, pepper and garlic powder over the top and cooked them in a preheated oven at 375 degrees for 30 minutes (baking time may vary, chicken breasts should be juicy but no longer pink in the middle when done).
After my low carb pizza stuffed chicken breasts were cooked to perfection, I removed them from the oven, and served them on a bed of wilted spinach for a delicious meal that my entire family adored.
Not only did the “stuffing” keep these chicken breasts juicy but when my family cut into the middle of them, gooey cheese and melty pizza ingredients spilled out, making this chicken dish anything but boring.

A low carb diet does work wonders and is good for fitness and health too. Was thinking of veg substitutes for the chicken to make a vegetarian variant of this recipe which looks so good and filling.
