I’m all about easy dinners and batch cooking right now. Seriously, both of the kids sports schedules have been so busy recently that I’ve been trying to do most of my cooking on the weekend and then just reheat things during the week. Because of this, I’ve been doing tons of bakes and casseroles so I’ve really been trying to think outside the box when it comes to creating dishes that are quick, easy, reheat well and taste amazing. One of my favorite options right now that I love to make ahead of time is my Chicken Cordon Bleu Casserole.
This easy-to-make Chicken Cordon Bleu Casserole takes all the flavors of one of my family’s favorite meals and makes it in a way that’s perfect for batch cooking and always tastes delicious. Let’s make it!
- 4 large chicken breasts
- 2 cups of chopped ham
- 16 ounces of sour cream
- 1 can of cream of chicken soup
- 1 can of cream of mushroom soup
- ¼ cup of yellow mustard
- 16 pieces of swiss cheese
- Diced green onions for garnish
- Cook the chicken and shred it.
- Divide the chicken into four equal parts and add one part to the bottom of two rectangle baking dishes.
- Divide the ham into fourths and top the chicken with one forth of the ham.
- Mix together the sour cream, soups and mustard and spread a fourth of the mixture over the ham.
- Top with slices of swiss cheese, covering the casserole completely.
- Repeat all of the layers again (chicken, ham, soup mixture, cheese).
- After adding the final layer of cheese, bake the casserole at 350 degrees for 45 minutes.
- Remove from the oven and top with green onions.
- Serve immediately or cover with foil and keep in the refrigerator for up to 3 days or freeze for later use.
I always (and I do mean always) use the amount of the recipe above because it makes two full casseroles meaning I can serve one for dinner the night that I cook one later in the week. To start my Chicken Cordon Bleu Casserole, I pull my shredded chicken out of the refrigerator. For those of you who don’t remember, I batch cook shredded chicken from frozen chicken breasts using this easy recipe so that I always have it on hand. That way I can simply pull it out, divide my chicken into fourths and start making my Chicken Cordon Bleu Casserole by spreading a fourth of my chicken in to the bottom of each of two baking dishes.
Next, I repeat the process with my ham, dividing it into fourths and sprinkling a fourth of the ham over my chicken.
Now the important part of creating a really good casserole is having some type of sauce to keep it moist so next I mix together my sour cream, both types of soup and my mustard. Then I simply spread it across the top of my ham.
After adding a layer of swiss cheese to the top of my sauce mixtures, I repeat the whole process, layering more chicken, ham, sauce and finally swiss cheese until my casserole dish is full.
Then I simply pop my Chicken Cordon Bleu Casserole into the oven that is preheated to 350 degrees and bake it for 45 minutes, until the cheese is warm and bubbly and all my flavors have cooked together perfectly. As soon as my Chicken Cordon Bleu Casserole is baked to perfection I do two things. I pull the one out that I want to use for dinner and sprinkle diced green onions over the top so that it can be served immediately.
With it’s creamy sauce, classic flavors and bubbly cheese, this is a dinner that never lasts long in my house and one that I keep in my regular meal planning rotation.
But remember, this Chicken Cordon Bleu Casserole recipes made two full casseroles so I take the second casserole out of the oven, cover it with foil and either pop it into the refrigerator for eating in the next few days or freeze it for use a week or more later. That way I know that I have a weeknight dinner option that will satisfy us all when times is short and cooking is not on my agenda.
