It’s no secret that I’m on a mission to be the best me possible. After a wakeup call last year that had me rethinking the way that I live, I’ve been making big and small changes in my life to ensure that I’m not only being my best me but living my best life. Personally, a lot of these changes have revolved around food (I mean, I LOVE food ya’ll!). I’ve stopped skipping meals or simply eating what the kids leave behind and have made it my mission to come up with delicious meals that I adore eating…even when I’m home alone. I buy fresh ingredients and I try new combinations and recently, inspired by the Be the Best You promotion at Publix (more on that later) I came up with what has easily become my go-to meal of the spring. These easy Ten Minute Taco Salad Bowls are made from fresh ingredients and are a simple meal that’s perfect for busy weekdays.
Before I get to my recipe for Ten Minute Taco Salad Bowls that you’re gonna want to bookmark so you can nosh away on this flavorful meal that fits right in with all your wellness goals, let’s talk for a minute about the key to my success when it comes to creating better-for-me meals, and that is without a doubt preparation.
I used to think that food was going to just materialize in my home (ha, right?). I didn’t plan well, and I didn’t stock up. But those days are gone and I’ve learned that for me, eating meals that help me be the best version of myself require a little thought and planning. While I’m always a big Publix shopper, I get really excited during the Be the Best You at Publix promotion. Haven’t heard of this sale? Don’t worry…I’m about to clue you in! From 5/18/19 to 6/15/19 you can be your best you and get over $65 in savings with participating products at Publix. That means that it’s time to stock up on delicious ingredients that will not only help you whip up the best easy snacks and meals but will also fuel the best you that’s just waiting to come out.
While I recommend checking out all of the participating products on sale at Publix during the Be the Best You promotion, I thought a little inspiration might be needed so I used three of the products from this promotion to create a quick and easy lunch that’s perfect for busy weekdays and fits right in with all of my wellness goals! Let’s make it, m’kay?
- 6 Mission® Carb Balance Tortillas
- 4 cups of fresh lettuce
- 1 bag of Tyson®, Grilled & Ready® Oven Roasted Diced Chicken Breast
- 2 tablespoons of taco seasoning
- ¼ cup of water
- ½ cup of shredded cheese
- 1 diced onion
- 1 diced avocado
- Sour cream
- To make the tortilla bowls, preheat the oven to 375 degrees Fahrenheit.
- Using either tortilla bowl molds or an upside-down muffin tin, shape tortillas into the shape of bowls.
- Spray with cooking spray and cook for 10 minutes or until sides begin to brown.
- While the tortilla bowls are cooking, heat the Tyson®, Grilled & Ready® Oven Roasted Diced Chicken Breast in a sauté pan.
- Once cooked, mix in the taco seasoning and water and simmer for 2 minutes.
- Remove the tortilla bowls from the oven.
- Layer in lettuce, seasoned chicken mixture, cheese, tomatoes, avocado and sour cream.
- Enjoy with S. PELLEGRINO® Sparkling Natural Mineral Water.
These Ten Minute Taco Salad Bowls are a perfect, easy lunch for busy weekdays and they are so simple you can make one or make an entire batch (remember, it’s nice to share and inspire friends to be the best versions of themselves as well!). To start, I needed to make my tortilla bowls and for me, Mission Carb Balance tortillas are the perfect place to start. Since I live a low(er) carb lifestyle, these tortillas are a staple in my home and they are so easy to turn into crispy, delicious taco salad bowls. To do this, I either use tortilla bowl molds or if I’m in a pinch, I simply turn a muffin pan upside down and use it to shape my tortillas.
Once my tortilla bowls are shaped, I spray them lightly with cooking spray and pop then in the oven on 375 degrees Fahrenheit for about ten minutes, just long enough for the edges to begin to brown and the bowls to take their shape. While my tortilla bowls are cooking, I grab my Tyson, Grilled & Ready Oven Roasted Diced Chicken Breast out of the freezer and cook my chicken. I love that with the resealable bag I can cook enough for one person or cook the entire bag and since the chicken is already pre-cooked to perfection, I don’t need long at all to heat it up. Once my chicken is warm, I add in my taco seasoning and water and allow them to simmer for about two minutes.
If I’ve planned things right, the timer on my oven goes off right when my chicken is ready and then assembling my Ten Minute Taco Salad Bowls is as easy as adding the ingredients in the right order. I start by adding lettuce to my taco salad bowls that were created from Mission Carb Smart Tortillas.
Next, I layer in a serving of my perfectly seasoned Tyson Grilled & Ready Chicken.
Then I add my shredded lettuce, diced tomato and avocado.
After drizzling on a little bit of sour cream, my Ten Minute Taco Salad Bowls are ready to enjoy….as soon as they are paired with the perfect beverage! In addition to eating dishes like this one that make me feel my best, I’ve been working on ways to increase my water intake (it’s hard to get 8 glasses a day) and one of my favorite ways is by stocking up on S. To create what is literally the perfect lunch that I can really get excited about, I simply pair my easy Ten Minute Taco Salad Bowls with my S.
