I’ve already shared that I’m pretty much a creature of habit when it comes to my eating. That might be why I so often find myself getting off track. I get bored and want flavor so I often end up stuck in a rut. This year, I’ve been making it my mission to repurpose last night’s leftovers into amazing lunches that I can actually get excited about. I want to keep things low carb but at the same time make them really flavorful. Since my family eats grilled pork tenderloin once a week as part of our meal planning rotation, I’ve found the perfect way to take what’s left and turn it into a really flavorful lunch by creating Creamy Dill Pork Lettuce Cups.
Truthfully, these Creamy Dill Pork Lettuce Cups are a take on a chicken salad lettuce cup I make but the grilled flavor of the pork combined with fresh dill and some basic ingredients is really satisfying. In fact, I dare admit that I like this lunch option better than traditional chicken salad. So, let me show you how to make it so that the next time your family has grilled pork tenderloin for dinner, you’ll know exactly what to do with the leftovers.
- 4 ounces of grilled pork tenderloin (cut into cubes)
- 2 teaspoons of olive oil mayonnaise
- 1 teaspoon of creamy dill mustard
- 1 tablespoon of pickle juice
- 1 tablespoon of fresh minced dill (plus more for garnish)
- 1 lettuce cup
- Cut the grilled pork tenderloin into cubes and add it to a bowl.
- Mix in the mayonnaise, creamy dill mustard, pickle juice and fresh dill.
- Combine the ingredients well.
- Spoon the mixture into a clean lettuce cup and sprinkle more fresh dill over the top.
- Pair with fruit and water for a satisfying lunch.
These Creamy Dill Pork Lettuce Cups take only minutes to make using leftover grilled pork tenderloin and they are so delicious. To start, I pulled out my leftover grilled pork tenderloin and measured out four ounces worth (this is one serving for me but you can adjust the amount based on your needs and appetite). After chopping my pork into small cubes, I added it to a bowl along with my mayonnaise, creamy dill mustard, pickle juice (that’s the secret ingredient that really makes this dish tangy and awesome!) and fresh dill.
Once I had all of my ingredients added to a bowl, I combined them well. then I simply spooned my Creamy Dill Pork salad into a clean lettuce cup.
After adding my Creamy Dill Pork Lettuce Cup to a platter, I added a little fruit and a glass of water and my meal was complete.
Not only is this meal easy to eat (making it perfect for us busy mamas who are always on the go) but with only 1 net carb per serving (minus the fruit) and tons of flavor, it’s the perfect way to make sure that last night’s leftovers don’t got to wast.
