Carrot Cake is one of my favorite desserts all year round. In fact, I don’t think there is ever a bad time for Carrot Cake so when I found an easy way to take the flavor I love and make it into a breakfast that’s quick, easy and delicious, I knew I had struck gold! With Easter coming up in just a few short days, I felt like I just HAD to share this can’t miss recipe that’s perfect for Easter morning or any morning really! Here’s how to make Easy Carrot Cake Muffins.
What You Will Need
2 Cups of Flour
3/4 Cups of Sugar
2 Teaspoons of Baking Soda
1 Teaspoon of Salt
1 Teaspoon of Ground Cinnamon
1/2 Cup of Vegetable Oil
3 Eggs
3 Teaspoons of Vanilla Extract
3 Cups of Grated Carrots
1/2 Cup of Raisins
1 and 1/2 Cups of Chopped Pecans (Divided in Half)
How to Make It
These Easy Carrot Cake Muffins that are perfect for Easter are simpler to whip up than you might think! To start, I preheated my oven to 350 degrees and lined my muffin tin with paper cups. Next, in a large bowl I mixed my flour, sugar, baking soda, salt and cinnamon. After setting my dry ingredients aside, I combined my oil, eggs and vanilla with a fork in a smaller bowl. After adding my wet ingredients to my dry ingredients, I stirred them all together until they were moistened. Once I had my batter mixed, I folded in my carrots, raising and 3/4 cups of my chopped pecans. I stirred just long enough to incorporate all the ingredients and then divided my batter evenly between my 12 muffin cups. After sprinkling the top of each muffin with the remaining 3/4 cup of my chopped pecans (about 1 tablespoon for each muffin), I baked my Easy Carrot Cake Muffins for 22 to 25 minute, until a toothpick inserted in the center comes out clean. Then I simple removed them from the oven, transferred them to a cooling rack and allowed them to cool complete (OK, almost completely because I couldn’t wait to taste them!). The results of my efforts were absolutely drool-worthy Easy Carrot Cake Muffins! Feast your eyes on these beauties!
