With all the time I’ve had on my hands over the last few months, I’ve experimented with different foods. I’ve tried veggies that we’ve never tried before and I’ve come up with main dishes that are out of the box. For me, eating at home has always been the norm but without the ability to go out to restaurants for so many months, it became essential to think outside the box. Add that to the fact that I really refined my Keto diet during this time at home and it’s safe to say that creativity has been the lifeline to keep my meals from getting boring. One of the dishes that I’ve discovered while being at home comes from a vegetable that, honestly, I had never eaten in my entire life; radishes. I kept hearing people talk about them but I had always seen them raw on salads and, for me, they just weren’t appealing. However, being bored of the same old things I decided to give them a try and let me tell you, when cooked correctly, they are a perfect substitute for potatoes for those of us who are watching our carbs. I discovered that the secret to making radishes really amazing is seasoning them right, cooking them for a LONG time and finishing them off in the air fryer. Yes, it’s a little more work but the end result tastes similar to homemade baked potato slices. Whether you’re Keto or not, let me show you how to make Crispy Oven Roasted Radishes with a few simple ingredients.
If you’ve never tried a radish (like I hadn’t), you may not be inclined to try this recipe but please, put your fears aside and get ready to fall in love. Once cooked, these Crispy Oven Roasted Radishes have a similar texture to potatoes and are so delicious as a low-carb substitute for meals that you would traditionally serve potatoes or fries with. Here’s how to make them.
- 3-4 bunches of radishes (about 2 cups sliced)
- 1 and ½ tablespoon avocado oil
- 3 tablespoons garlic seasoning (I like Flavor God)
- Wash the radishes and remove the stems.
- Cut off the top and bottom and then slice into thin slices.
- Add the sliced radishes to a bowl and toss with the avocado oil and garlic seasoning.
- Spread the seasoned radishes in a single layer on a baking pan.
- Bake in the oven on 400 degrees for 40 minutes.
- Air fry the radishes for an additional 10 minutes or until crispy.
- Serve immediately.
The key to making these Crispy Oven Baked Radishes taste similar to potatoes in in the seasoning and cooking. To start, I of course need radishes.
Once my radishes are washed, I remove the green stems, cut off the roots at the top and bottom and slice them into thin slices. Then I add my radishes to a bowl along with my avocado oil and garlic seasoning. You can use fresh garlic, minced garlic, garlic salt or my all time favorite Flavor God Garlic Lover’s seasoning. I then toss the radishes gently in the oil and garlic until they are coated evenly.
Once my radishes are seasoned, it’s time to cook them. I like to line my baking pan with aluminum foil to make clean up easy and then I spread the radishes out in a single layer on the pan.
For me, the secret to getting that potato like taste is in how long I cook my radishes. I’m fortunate that I have the Frigidaire Air Fryer Oven that allows me to do a two step cooking process to really make these perfect (you can learn more about my oven here). I start by baking on radishes at 400 degrees for 40 minutes. I know that sounds like a long time but you really have to dry out the radishes with heat to get that potato like taste and texture. Once my radishes have started to turn translucent and brown in some place, I switch my oven to air fry mode and air fry the radishes at 500 degrees for 10 minutes, until they are slightly crispy. If you don’t have an air fryer feature on your oven like I do, I would simple transfer the cooked radishes to your air fryer for 10 minutes. Once the radishes start to crisp, they are cooked and ready to serve.
I promise you that these tasty Crispy Oven Roasted Radishes are a perfect substitution for potatoes and they are super low in carbs.
