While there are certain items that I will buckle down and make from scratch, more often than not I prefer to take tasty shortcuts and have some of my favorite staples on hand that can be turned into delicious recipes and are easy enough to whip up in minutes but impressive enough to serve when guests show up unexpectedly. That’s why any time you visit my home, you’ll find my refrigerator and freezer fully stocked with a variety of products that can be transformed into an amazing meal in minutes. In fact, any time I shop at Publix I make sure that I peruse the freezer and dairy aisles for inspiration to make an amazing meal in minutes. If you’re like me and find inspiration in unexpected places, you’ll want to visit Publix from October 13th through 26th to take advantage of their Cool Foods savings on some of your favorite frozen and dairy products. While you’re there, be sure to pick up the ingredients (most of which happen to be part of the Cool Foods savings!) to whip up these Lemon Blueberry Cheesecake Waffles that taste sinfully good but are surprisingly easy to make and high in protein!
Now, I know that these Lemon Blueberry Cheesecake Waffles look like a weekend meal but let me tell you, using a few of my favorite products from Publix I can whip them up in minutes any day of the week. I mean, can’t we all agree that Monday morning doesn’t look so bad anymore when you’re noshing on this delicious dish? Even better, most of the ingredients used in it are on sale right now at Publix during the Cool Foods savings event (you can find a full list of eligible products here). I know you may be thinking that there is no way that I made this Lemon Blueberry Cheesecake Waffles in less than 15 minutes and with a very few ingredients but honestly, I did, and now, I’m going to show you exactly how you can do it too!
- 8 Kodiak Cakes Power Waffles (Buttermilk and Vanilla Flavor)
- 2 Cups of Dole Frozen Blueberries
- ⅓ Cup of Water
- 2 Tablespoons of Calorie Free Sweetener
- 4 Ounces of Cream Cheese (Softened)
- 1 Container of Chobani Smooth Yogurt in Vanilla
- ½ Lemon
- 2 Tablespoons of Calorie Free Confectioner's Sugar Substitute
- Start by adding your Dole Frozen Blueberries, water and calorie free sweetener to small saucepan.
- Bring your blueberries to a boil and then turn down the heat, allowing them to simmer.
- While your blueberries are cooking, add the cream cheese, yogurt, lemon and confectioner's sugar substitute to a small bowl and mix well.
- Add your Kodiak Cakes Power Waffles to the toaster and cook them until they are warm and crispy.
- Top 2 waffles with 2 tablespoons of the yogurt mixture.
- Drizzle 2 tablespoons of the blueberry mixture over the top.
- Garnish with a lemon slice and enjoy!
While these Lemon Blueberry Cheesecake Waffles look super impressive, you’re not going to believe how easy they are to make when you use frozen and dairy ingredients from Publix! To start, I added Dole Frozen Blueberries, water and calorie free sweetener to a small pot and brought it to a boil. Then I reduced the heat to low and let it simmer while I made my lemon cheesecake topping.
While my blueberry sauce was simmering, I added my softened cream cheese, Chobani Smooth Yogurt, lemon juice and calorie free confectioner’s sugar to a small bowl and blended it until it was smooth and creamy. With the vanilla option of the Chobani Smooth Yogurt, I didn’t have to add extracts or flavoring to achieve that rich, creamy cheesecake flavor that I was going for.
Once my lemon cheesecake topping was made (it takes about 2 minutes tops), I added my Kodiak Cakes Power Waffles to my toaster and pushed down the button.
As my house started to fill with the rich vanilla smell of the Kodiak Cakes Power Waffles (which, let me mention, are a staple for me due to their high protein and lower carb count), I giggled knowing that I could fool anyone who walked in into thinking that I’d been baking all morning just from the smell of my kitchen! As soon as my Power Waffles popped up, I placed them on a plate and set to work assembling my Lemon Blueberry Cheesecake Waffles.
I started by scooping two tablespoons of my lemon cheesecake mixture made from Chobani Smooth Yogurt onto the top of the waffles.
Then I drizzled a tablespoon (OK, I may have used a tad more but why shouldn’t I? Fruit is good, right?) of my blueberry sauce over the top of the creamy cheesecake mixture.
Instantly, I had a breakfast that’s simple enough for weekdays but feels like a weekend treat.
After garnishing my Lemon Blueberry Cheesecake Waffles with a slice of lemon, I sat back to enjoy the fruits of my labor and oh, how enjoyable it was!
The vanilla undertones of the Power Waffles blended perfectly with the slight tang of the lemon cheesecake mixture and the sweetness of the blueberry sauce to create a breakfast that is not only satisfying but also a perfect way to fuel my busy days.
With a breakfast this easy to whip up that’s totally worth getting out of bed for, I never worry that weekday or weekend mornings won’t be delicious!
