With the holiday season upon us, I’m dreaming about lazy mornings sans alarm clock and leisurely breakfasts with my family and friends. During this time of year, I literally count down the days until school is out and family time is in. During those weeks, my home is filled with laughter, love and the smells of delicious dishes wafting out of my kitchen. It’s not at all unusual for me to have a house full of people in the days and weeks leading up to Christmas morning and so it’s important to me that I have hearty breakfast options that capture the taste of the season and leave everyone around my table satisfied. Whether I find myself surrounded by my three favorite guys on a weekend morning or with my house filled with friends and family as we near the holidays, one of my favorite breakfast recipes to serve up is my easy and delicious Sweet Potato and Sausage Hash with Eggs.
What makes this easy dish perfect for the holidays? Well, quite a few things to be honest. It’s warm. It’s delicious. It’s easy to make in big or small amounts. But perhaps the best thing about this Sweet Potato and Sausage Hash with Eggs is the fact that it’s the perfect dish to bring family and friends together. Let’s make it, shall we?
- 1 Package of Johnsonville Vermont Maple Syrup Breakfast Sausages
- 5-6 large sweet potatoes (peeled and cubed)
- 1 large sweet onion (diced)
- 1 teaspoon of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of ground paprika
- ½ teaspoon of cinnamon
- ½ teaspoon of salt
- 4 eggs
- Thinly sliced green onions (for garnish)
- Cut the Johnsonville Vermont Maple Syrup Breakfast Sausages into slices and brown completely.
- Transfer the Johnsonville Vermont Maple Syrup Breakfast Sausages to a paper towel lined sheet and repeat the process with the diced onions.
- Once translucent, remove the onions from the pan and set aside.
- Add the olive oil and sweet potatoes to the pan and cook, stirring occasionally, until the potatoes are crisp on the outside and soft in the middle.
- Once the potatoes are cooked, sprinkle the cumin, paprika, cinnamon and salt over the top and toss.
- Transfer the sweet potatoes, sausage and onions to a cast iron skillet and mix together well.
- Crack the eggs over the sweet potato hash and cook in a preheated oven for 15 minutes at 450 degrees Fahrenheit, until the eggs are set.
- Sprinkle green onions over the top and serve immediately.

Once you’ve picked up your Johnsonville Vermont Maple Syrup Breakfast Sausages and the rest of your ingredients from Publix, you can start putting together this Sweet Potato and Sausage Hash with Eggs. To start, I cut my Johnsonville Vermont Maple Syrup Breakfast Sausages into slices and browned them completely in a sauté pan.
Once my Johnsonville Vermont Maple Syrup Breakfast Sausages were cooked to perfection, I set them aside and repeated the process with my onions, cooking them until they were translucent. After transferring my onions to a bowl, I added the olive oil and my cubed sweet potatoes to my pan and turned up the heat to medium-high. Stirring constantly, I cooked my sweet potatoes for about ten minutes, just long enough to get outsides of the cubes crispy and the insides soft. Once my sweet potatoes were cooked to perfection, I sprinkled my cumin, paprika, cinnamon and salt over the top and gently tossed the sweet potatoes in the seasoning.
Once that was done, I was ready to assemble my Sweet Potato and Sausage Hash with Eggs by adding all my ingredients back to the pan and stirring them together.
Once my hash was perfectly mixed, it was time to think about presentation. I’m a Southern gal so for me, reaching for a cast iron pan to bring my dish together was second nature. Once I had pulled out my cast iron pan, I filled my pan with the mixture.
Then, I cracked my four eggs on top and sprinkled a little pepper over the eggs.
Once my eggs were in place, I popped my skillet into the oven and cooked the entire dish for fifteen minutes on 450 degrees Fahrenheit, just long enough for the eggs to set.
As soon as I removed my Sweet Potato and Sausage Hash with Eggs from the oven, I sprinkled my diced green onions over the top and served it up to my waiting family.
Let me tell you, nothing brings everyone together around my table faster than this delicious dish and it’s such a warm and hearty breakfast that is perfect for the busy holiday season. This is my all time favorite breakfast my used to make when we visit her. Though normally she uses the regular potato. I don’t mind trying sweet potato though it is as tasty as the regular one and healthy too.

Sweet potato has a specific flavour and aroma which it lends to dishes, this is something we really love. Being vegetarians we do prepare a few veg curries where the sweet potato adds a unique flavour. Usually we pair it with eggplant and peas.
