With the start of school on the horizon and our schedules getting busier by the day, I’m back in the kitchen coming up with ways to simplify dinner time and serve up meals that are quick and easy. In my home, pasta is a go-to for busy weeknights, so it’s naturally a staple that I always have on hand. While any type of pasta is welcome on my family table, I’m always on the look-out for ways to mix things up and create meals that are easy to prepare and use a minimal number of dishes. That’s why I’m so excited to share with you not only my recipe for One Pot Vegetable Penne with Marinara but also the perfect way to stock up and save while create amazing Italian meals by shopping at the Make it Italian event at Publix now. Read on to learn how to thrill your family with an easy one pot dish that’s bursting with flavor while saving on the ingredients!
Being a busy, on-the-go mom, it’s important that I’ve got my recipe box stocked with easy dishes that are satisfying yet simple. Naturally, pasta dishes are at the top of this list for me and I’m just gonna tell you that if you looked in my pantry, you’d find perfectly lined up boxes of pasta and sauce that are the inspiration for many simple Italian meals. While these products are staples in my home year round, right now I’m loving them even more because I can save on their purchase by picking them up during the Make it Italian event at Publix. By grabbing included Italian essentials for my favorite Italian meals like Bertolli® Rustic Cut Pasta Sauce, Bertolli® Olive Oil, Ronzoni Homestyle Pasta and fresh French bread from the Publix Bakery, I never have to worry that I won’t know what to serve for dinner. Truthfully, there are so many ways to mix up this meal that range from simple to over-the-top but right now my absolute favorite Italian dish to make is my One Pot Vegetable Penne with Marinara. This simple dish that can be made in just one pot (hallelujah for minimal dishes!) pairs perfectly with Hassleback Garlic French Bread made with fresh French bread from the Publix Bakery to create a dinner that feels like I spent all day in the kitchen without having to actually do that. Now, I know just my meal description has you drooling (and rightly so!) so grab your keys, head to Publix today to pick up participating items in the Make it Italian event, and then let’s get to work making a simple dinner that’s sure to satisfy.
- 1 box of Ronzoni Homestyle Penne Pasta
- 1 jar of Bertolli Rustic Cut Pasta Sauce
- 2 cups of water
- 2 Tablespoons of Bertolli Olive oil
- 2 large zucchini
- 1 sweet onion
- 2-3 peppers
- 2 broccoli heads
- ½ cup grated Parmesan cheese
- Oregano for garnish
- Cut the zucchini, sweet onion, peppers and broccoli into bite size pieces and sauté with the Bertolli Olive Oil in a pan until they are tender (5-7 minutes).
- Set the veggies aside and add the water and Bertolli Rustic Cut Pasta Sauce to the pan.
- Stir in the Ronzoni Homestyle Penne Pasta and bring the mixture to a boil.
- Cover and simmer the pasta mixture on medium-low for 15 minutes.
- Add the veggies back in and combine well.
- Sprinkle with grated Parmesan cheese and fresh oregano.
To start this easy One Pot Vegetable Penne with Marinara, I simply grabbed some of my favorite veggies, cut them into bite sized pieces and added them to a large sauté pan along with my Bertolli Olive Oil. I then cooked them on medium for about five to seven minutes, just long enough for them to become tender. Once my veggies were cooked, I removed them from the pan and set them aside.
Next, I turned up the heat on my burner, added my water and Bertolli Rustic Cut Pasta Sauce to that same sauté pan, and mixed in my Ronzoni Homestyle Pasta. After bringing the mixture to a boil, I lowered the heat to medium-low, covered the pasta and allowed it to cook for about fifteen minutes.
While my pasta was cooking, I decided to complement this fabulously simple dish with what is in my mind the perfect Italian side dish…Hassleback Garlic French Bread. Since I always pick up a loaf of freshly baked French bread when I’m at the Publix Bakery, this was a natural choice for me to pair with my pasta and the ability to save on purchasing it during the Make it Italian event ensured that I had everything I needed to create the perfect Italian meal!
- 1 loaf of fresh French bread from the Publix Bakery
- 3 Tablespoons of Bertolli Olive Oil
- 3 Tablespoons of butter
- 2 Tablespoons of freshly minced garlic
- 1 Tablespoon of finely diced oregano
- 1 cup of grated Parmesan cheese
- Cut slices about ½ inch apart into the French bread, only cutting ¾ of the way through the loaf.
- Place the prepared French bread on a foil lined baking sheet.
- Melt the butter and mix in the Olive oil, garlic and oregano.
- Spoon the mixture over the sliced bread, ensuring you get it into the slices.
- Sprinkle the Parmesan cheese over the bread and into the slices.
- Bake at 400 degrees Fahrenheit for 10 minutes.
- Serve with One Pot Vegetable Penne with Marinara
This Hassleback Garlic French Bread is about the easiest thing ever to make thanks to the Publix Bakery. It takes the work out of making perfect bread! To start, I simply sliced my loaf of French bread into 1/2 inch slices, not cutting completely through the bread, so that the piece remained whole but was sliced to perfection.
As soon as my bread was sliced, I added it to a foil lined baking sheet. Then I melted my butter and mixed it with my Olive Oil, garlic and oregano. After this mixture was well combined, I spooned it over the top of my prepared French bread, making sure I got plenty of it into the slices.
Next, I sprinkled my grated Parmesan cheese over the top and into the slices. Then I simply popped my Hassleback Garlic French Bread into the oven at 400 degrees Fahrenheit for ten minutes to achieve garlic bread perfection on a whole new level!
By the time my Hassleback Garlic French Bread came out of the oven, my pasta was perfectly cooked and almost ready to be served. To finish it up, I removed the lid of my pan, mixed all those veggies that I cooked earlier back in and sprinkled grated Parmesan cheese and fresh oregano over the top.
I immediately transferred my prepared One Pot Vegetable Penne with Marinara to the table along with my Hassleback Garlic French Bread. After adding some plates, serving utensils and of course my Vanity Fair Extra Absorbant Napkins (did I mention they are also part of the Make it Italian promotion?), I had what is in my mind the perfect EASY Italian dish to satisfy every member of my family.
