Now that the cold weather seems to be here to stay, I’m craving soup constantly. I’ll be the first to admit that we grill out pretty much every night during the warmer months but in winter, all I want is to curl up with a warm bowl of soup and enjoy being indoors. While I like all types of soup, one of my favorite soups is Cheddar and Broccoli soup. There is just something comforting about it that makes me want to snuggle up in front of the fire while I cook it. However, I knew that to turn this soup into a meal my guys could get behind, I needed to add a little more substance and with just a few simple tweaks, I created a Keto Cheesy Chicken & Broccoli Soup in the slow cooker that’s easy, filling and low in carbs! Total score right?
Trust me when I say that this Keto Cheesy Chicken and Broccoli Soup is going to be your go-to this winter whether you live a low-carb lifestyle or not. I just love how comforting it is and the fact that it fits in with my Keto lifestyle while still being a meal the whole family adores is a total win in my book. So, let’s make it.
- 4 Boneless, skinless chicken breasts
- 4 cups of chicken Bone Broth
- 2 tablespoons of butter
- 1 cup of whipping cream
- 8 ounces of cream cheese
- 2 cups of finely chopped broccoli
- 2 cups of Mexican blend cheese
- Salt and Pepper to taste
- Add the chicken breasts and two cups of bone broth to the slow cooker.
- Season with salt and pepper to taste.
- Cook on high for 3 hours.
- Shred the chicken using two forks and transfer it to a bowl with the broth.
- Cover immediately and keep warm.
- Add the butter, cream cheese, whipping cream and remainder of bone broth to the slow cooker.
- Heat, combining all ingredients well.
- Add in the finely chopped broccoli.
- Cover and cook for 1 hour on low.
- Mix in the cheese. .
- Cook for 20 minutes on low or until creamy.
- Mix back in the shredded chicken and heat for 30 more minutes on low until everything is warm and combined.
- Serve immediately garnished with more shredded cheese and bacon (optional).
This Keto Cheesy Chicken and Broccoli Soup has less than 5 carbs per serving (seriously!) and is so warm and filling. To start, I cook my chicken. As a side note, if you’re really in a hurry you can use canned, shredded chicken or even a pre-cook rotisserie chicken and skip right to making the cheese soup but I really like to shred my own chicken and it’s so easy! To make it, I simply add four boneless, skinless chicken breasts to my slow cooker, pour in two cups of bone broth (a must for a Keto diet) and season with salt and pepper.
I allow the chicken to cook on high for three hours and then I shred it with forks (it’s so tender!) and transfer both the chicken and the broth mixture to a bowl which I cover and keep warm while I move on to the next step on my recipe.
Once my chicken is ready, I wipe out the inside of my slow cooker and then add my butter, cream cheese, whipping cream and the remainder of my bone broth. I cook this on low for just long enough for everything to melt and then I stir it well. Once my mixture is creamy, I pour my finely chopped broccoli in. You can skip the step of chopping the broccoli if you want but it will take longer to cook and I just love the little tiny pieces of broccoli in every bite.
After stirring in my broccoli, I cover my mixture and cook it on low for one hour, long enough to make the broccoli tender. Then I simply open it up, add in my cheese and stir it well. I generally cook it again on low for about 30 minutes just to really get the cheese melty.
Then I add back in my chicken and depending on how thick the soup is, possibly some more of the bone broth mixture that the chicken was cooked in.
30 more minutes on low heat and my Keto Cheesy Broccoli and Chicken Soup is ready to serve. For the most part, I just put it in a bowl and top with a sprinkle of cheese but sometimes I even add some chopped up bacon for a little extra flavor and crunch.
And if you’re a carb eater, you can even serve it in a bread bowl. The truth is whether you top it, mix it, dip it or serve it, this Keto Cheesy Chicken and Broccoli Soup is seriously good and seriously simple to make!

As a pescatarian I won’t be able to make this recipe all the way due to meat. If I can remove the meat I would love to recreate it and it be just as enjoyable.
