With summer time all around, we love cooking fish at our house. And while I love it grilled and the guys love it fried, we needed to find a way to make something that everyone in the family would love. Lower fat than fried, bolder tasting than grilled and perfectly delicious. So, we tried out a little something new. And the results were yummy! So get ready for a healthy twist on your classic fish with a taste that will leave you begging for more!
Panko and Parmesan Encrusted Flounder Recipe
What You Will Need
4 to 6 Pieces of thawed flounder
1 Cup Panko bread crumbs
1/2 Cup Parmesan Cheese
1 Egg
2 Tablespoons Olive Oil
How to Make It
Begin by beating your egg in a bowl and mixing together one cup of Panko bread crumbs and 1/2 cup of Parmesan cheese and spreading it on a plate. Next warm your two tablespoons of olive oil in a large pan. Place each piece of wish in the egg and roll it to make sure it is coated well.
Remove your fish from the egg and roll in the panko and Parmesan mixture. You may need to use your fingers to rub in the breading to make sure that it sticks to the fish. Roll the fish several times in the mixture until it is covered.
Now place your fish into your heated pan and sear on each side for approximately three minutes or until the fish becomes flaky.
Once your fish is fully cooked, remove it from the pan and place on a paper towel to let any excess oil drain. Then serve with grilled veggies of your choice (you can find a great recipe for grilled veggies here) and fruit or a roll.
You will have a wonderfully light dish that is perfect for warm summer evenings! Enjoy!

I have a similar recipe using tilapia, but it works on orange roughy, too. Sometimes I add Italian seasoning to the panko/Parmesan mix, other times I add chile powder, cayenne and cumin. There are lots of ways to tinker with it, and they’re all good!
Totally a side comment here, but I just tasted chocolate with Panko bread crumbs and it was really good!

What a wonderfully simple, fast and easy recipe to make - and it really does sound delicious. I’ve been trying to get my Honey/Hubby to eat more fish - more often- but he tends to only like it deep fried as in “FISH & CHIPS!
It sounds like this provide the crispy/crunch without the full batter and deep oil cooking process (which I also hate - such a greasy mess and dangerous too in terms of “spitting” hot oil!)
I prefer to use fresh fish if possible - and around here we don’t see much flounder either fresh or frozen! So I think I will try this recipe using easier to find here types of fish - like Cod, Whitefish, Snapper or Bass my VERY $$$$ favorite, fresh Alaskan Halibut and of course, the ubiquitous Tilapia and Catfish.

What a nice simple recipe and it looks so good. I’m gonna have to give this a try. In fact, I’m going to try it on chicken too.
This has become hands down my favorite way to prepare any kind of fish - and I’m betting any and everyone will eat and love it - even rabid fish haters (it even works with salmon filets!
I also experienced with using two eggs whites for those worried about their egg yolk intake - and that turned out great too!
I made something very similar to this but yours looks so mucb better, I guess I need to dump my recipe and try this one. I love fish but have a hard time making it taste good. I’ll give this a try. Thanks for posting.
